1. 노니 발효숙성 농축액의 제조1. Preparation of Noni fermentation and ripening concentrate
야생에서 수확된 노니 열매를 자동 세척기로 세척하여 노니 열매 표면에 잔존하는 이물질을 제거하였다. 세척 후 표면에 물기를 제거한 노니 열매에 사카로마이세스 세레비시애, 락토바실러스 플란타룸 및 바실러스 서브틸리스 혼합 분말을 노니 열매 총 중량 대비 0.5 중량%로 항아리에 투입하고 입구를 밀봉한 후 26 ~ 28 ℃에서 14일간 발효시켰다. 이때, 이전에 발효·숙성된 노니 숙성액을 10 ~ 20 중량%로 첨가하였다. 발효된 노니 열매를 압착기를 이용하여 껍질부터 씨앗까지 통째로 압착하였다. 또한, 압착한 후 건더기를 분리하고 얻은 노니 발효물에 발효과정에서 생성된 발효액을 수거하여 첨가하였다. 수거된 노니 발효물은 숙성탱크에 투입하여 24 ~ 26 ℃에서 30일 동안 숙성시켰다. 이후 숙성된 노니 발효물을 필터로 여과하여 노니 열매 찌꺼기를 제거하였다. 또한, 여과된 노니 발효물을 멸균기를 이용하여 90 ℃에서 20분간 멸균한 후 중탕기를 이용하여 55 ~ 57 ℃에서 3 ~ 4시간 동안 중탕하여 33 ~ 35 브릭스가 될 때까지 농축시켰다. 실시예 1 내지 4의 노니청 및 비교예 1의 노니 발효숙성 농축액에 대하여 관능시험을 수행하였다. 제조된 노니 청에 대한 소비자 기호도 특성을 평가하기 위하여 2세 ~ 15세의 30명의 소아·청소년을 대상으로 하여 관능 평가를 진행한 결과를 표 2에 나타내었다. 관능 시험 항목은 향(flavor), 맛(taste), 색(color) 및 전반적 선호도(overall quality)로 하고, +점은 '부족하다', ++점은 '보통이다', +++점은 '충분하다' 또는 '과하다'로 평가하였다. 관능 시험용 노니 청은 개인용 용기에 담아 제공하였고, 각 시료의 용기에 무작위로 숫자를 표기하여 비공개로 진행하였다. 1개의 시료를 평가한 후 반드시 생수로 입안을 헹군 후 다른 시료를 평가하도록 하였다.A sensory test was performed on the Noni Cheong of Examples 1 to 4 and the Noni fermentation and ripening concentrate of Comparative Example 1.
