실험 예1[관능검사]Experimental Example 1 [Sensory Test]
본 실험 예1에서는 실시 예1를 통하여 제조한 토마토소금에 대하여 관능검사를 수행하였다. 관능검사 기법은 30명을 대상으로 실시하였으며, 색, 향, 맛, 조직감 및 전제척인 기호도 등 5개 항목으로 나누어 10점 만점의 기호 척도법으로 측정하여 그 결과를 하기 표 1에 나타내었다.In the Experimental Example 1, the sensory test was performed on the tomato salt prepared in Example 1. 상기 배합소금에 스며든 토마토즙의 색상을 유지시키기 위해 그늘에서 22시간 내지 26시간 건조하는 1차건조단계와,
상기 1차건조된 배합소금에 남은 물기를 제거하기 위해 50℃ 내지 70℃에서 적어도 6시간 동안 건조하는 2차건조단계와,
상기 2차건조된 배합소금의 부패를 방지하기 위해 밀폐용기에 투입하여 토마토소금을 완성하는 포장단계를 포함하여 구성되는 토마토소금의 제조방법.
