Abstract
꽃벵이 사육시 추가로 간기능에 효과가 있는 영양소를 첨가하고 굼벵이 특유의 누린내를 잡는 방법을 기술하였다.
Description
곤충 사육 > 절식 > 세척 > 데치기 > 건조의 순으로 이루어지는 곤충의 식용화 방법 개요에서 영양소 첨가와 누린네를 제거하는 방법이다.
간기능 회복에 효과가 있는 꽃벵이(굼벵이, 꽃무지 유충)의 사육 및 가공시 간에 좋은 영양소를 첨가하며 꽃벵이의 가공 후 섭취시 문제가 되는 누린내를 제거하는 방법이되는 기술이다.
현재 전 세계적인 미래 먹거리로 각광받는 식용곤충 중에서 예로부터 한약재로 사용되어온 꽃벵이(굼벵이)가 16년부터 한시적 식품허가에서 정식으로 식품허가가 승인되었다.
예로부터 동의보감, 본초강목 등의 의학 서에 간에 효능이 있다고 알려진 굼벵이가 최근 실험으로도 간 기능 회복에 효능이 있다는 연구결과가 발표되며 꽃벵이와 함께 허브 및 약제 이용하여 영양소를 첨가하며, 가공 후 꽃벵이 특유의 누린내를 제거하는 방법이 되는 기술이다.
1. 꽃벵이 사육시 꽃벵이의 주 먹이가 되는 발효 톱밥에 간 기능 회복에 효과가있는 밀크시슬과 더불어 둥굴레, 헛개나무 등을 함께 급여하여 영양소를 첨가한다.
2. 꽃벵이의 데치기 과정에서 밀크시슬, 둥굴레, 헛개나무 및 약제를 첨가하여 영양소를 첨가하며, 민트류의 허브를 이용하여 특유의 누린내를 제거한다.
3. 꽃벵이의 건조 과정에서 민트류의 허브를 같이 건조하여 데치기 과정 이후에도 날 수 있는 누린내를 추가로 제거한다.
4. 꽃벵이의 데치기 > 건조 과정을 수차례 반복하여 영양소 첨가 및 누린내를 확실하게 잡는다.
간 기능 회복에 도움이 되는 꽃벵이에 밀크시슬[밀크시슬에 함유된 실리마린( 각종 독소들로 부터 간을 보호하며, 간세포의 신진대사를 도와주고, 간세포의 파괴를 막아줌과 동시에 숙취의 주성분인 아세트알데히드를 분해하는데 도움이됨)과 면역글로불린(면역력 향상에 도움이됨)], 둥굴레, 헛개나무를 급여하며 가공에 응용하여 영양소를 첨가, 민트류의 허브 및 생강등을 이용하여 누린내를 제거한다.
기존의 굼벵이 사육 및 가공에 추가되는 항목을 표기 비교 하였다
01. 꽃벵이의 주먹이가 되는 발효 톱밥에 밀크시슬, 둥굴레, 헛개나무를 함께 급여한다.
02. 꽃벵이 가공시 데치기 과정에서 밀크시슬, 둥굴레, 헛개나무 및 약제를 넣어 영양소를 첨가하며 민트류의 허브 및 생강등을 이용하여 꽃벵이 특유의 누린내를 제거한다.
03. 꽃벵이의 데치기 과정에서 민트류의 허브 및 생강등을 이용하여 1차 누린내 제거를 한 후 꽃벵이의 건조과정에서도 민트류의 허브를 같이 건조함으로써 2차 누린내 제거를 한다.
04. 상기 03에 표기한 데치기와 건조과정을 반복하여 영양소 첨가와 누린내 제거를 한다.

- 청구항 01. 꽃벵이의 주 먹이인 발효 톱밥에 밀크시슬, 둥굴레, 헛개나무를 함께 급여하여 간기능에 관한 영양소를 첨가한다.
청구항 02. 꽃벵이의 가공가정 중 데치기 과정에서 밀크시슬, 둥굴레, 헛개나무 및 각종 한약제를 첨가하여 영양성분을 추가하며, 민트류의 허브 및 생강을 이용하여 꽃벵이 특유의 누린내를 잡아준다.
청구항 03. 꽃벵이의 가공가정 중 건조과정에서 민트류의 허브를 같이 건조 함으로써 청구항 02의 데치기 과정 이후에도 날 수 있는 누린내를 추가로 잡아준다.
청구항 04. 청구항 02와 청구항 03을 반복하여 영양분의 첨가와 누린내를 확실히 제거한다.
