상기 표 2를 살펴보면, 비교예로 추출한 경우보다 실시예로 추출한 경우, 아스코르브산, 카페인산, 쿠쿠르비타신 D와 23,24-디하이드로 쿠쿠르비타신 D의 추출수율이 전반적으로 높다는 것을 알 수 있다. 특히 아스코르브산과 카페인산은 비교예보다 실시예로 추출한 경우가 최대 2배 이상(실시예 7~8 참조) 높았으며, 특히 실시예 7(pH 5, 염화나트륨 1중량%, 에탄올 10중량%)로 추출한 경우의 추출수율이 현저하게 높다는 것을 확인할 수 있다.
Table 2 shows that the extraction yields of ascorbic acid, caffeic acid, cucurbitacin D and 23,24-dihydrocucurbitacin D were generally higher than those of the extracts of Comparative Examples . 상기 표 1의 비교예와 실시예에서 아스코르브산, 카페인산, 쿠쿠르비타신 D 및 23,24-디하이드로 쿠쿠르비타신 D의 저장기간에 따른 함량변화를 표 3~6 및 도 1~4에 나타내었다. 주요성분의 함량변화는 각 저장기간 별로 추출용액을 고속원심분리기(10000RPM)에 10분간 원심분리하여 상등액을 고속액체크로마토그래피(HPLC)에 주입하여 분석하였다. 상기 표 2의 결과를 바탕으로, 추출수율이 가장 높은 실시예 7과 비교예에서의 함량변화를 비교하였으며, 이 때 비교예에서의 추출수율을 100으로 하였다.The contents of ascorbic acid, caffeic acid, cucurbitacin D and 23,24-dihydrocucurbitacin D in the comparative examples and the examples shown in Table 1 are shown in Tables 3-6 and 1-4 Respectively. 상기 표 3 및 도 1을 살펴보면, 비교예에서는 저장기간이 지날수록 아스코르브산의 함량이 급격하게 감소하였으며, 특히 저장 후 15일째는 아스코르브산이 모두 파괴되었다. 하지만, 실시예 7에서는 저장기간이 지날수록 아스코르브산의 함량이 서서히 감소하였으며, 저장 후 20일째에도 비교예에서의 추출수율보다 높은 아스코르브산 비율을 유지함을 알 수 있다.

상기 표 4 및 도 2을 살펴보면, 비교예에서는 저장기간이 지날수록 카페인산의 함량이 급격하게 감소하였으며, 특히 저장 후 20일째는 카페인산이 모두 파괴되었다. 하지만, 실시예 7에서는 저장기간이 지날수록 카페인산의 함량이 서서히 감소하였으며, 저장 후 20일째에도 비교예에서의 추출수율보다 높은 카페인산 비율을 유지함을 알 수 있다.

상기 표 5 및 도 3을 살펴보면 비교예에서는 저장기간이 지날수록 쿠쿠르비타신 D 의 함량이 급격하게 감소하여, 저장 후 20일째에는 쿠쿠르비타신 D가 거의 파괴되었지만, 실시예 7에서는 저장기간이 지나도 쿠쿠르비타신 D가 거의 파괴되지 않음을 확인할 수 있다.
