Abstract
본 발명에 따르면 새싹채소로부터 분리 및 동정한 균을 이용하여 식중독 균에 대해 항균효과를 갖는 조성물을 제조할 수 있다. 구체적으로 본 발명에 따르면 새싹채소로부터 분리된 미생물 중 E. coli O157:H7 및 살모넬라(Salmonella)에 항균효과가 있는 패니바실러스 폴리믹사(Paenibacillus polymyxa)를 동정하였으며, 상기 패니바실러스 폴리믹사를 E. coli O157:H7이 오염된 무순종자에 적용함으로써 새싹으로 자란 무순에서 E. coli O157:H7을 저감화함을 확인하였다. 따라서 새싹채소로부터 분리한 본 발명의 패니바실러스 폴리믹사를 이용하면 식중독 예방이 가능할 것이며, 식품의 안전성 확보에도 크게 기여할 수 있을 것으로 사료된다.

Claims (8)
- 새싹채소에서 분리한 패니바실러스 폴리믹사(Paenibacillus polymyxa) 미생물을 유효성분으로 함유하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 패니바실러스 폴리믹사(Paenibacillus polymyxa)는 새싹채소 또는 새싹씨앗을 멸균된 생리식염수에 넣고 균질화하고, 고체 영양배지(Plate count agar)에 도말하고 배양하여 각각의 콜로니를 분리하고, 분리된 콜로니를 접종한 아래층의 배지와 식중독균을 접종한 위층의 배지로 구성된 Double-layer assay를 이용하여 항균성이 확인된 패니바실러스 폴리믹사가 분리된 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 패니바실러스 폴리믹사(Paenibacillus polymyxa)는 표 1의 생화학적 특성을 가지고, 서열번호 1의 16S rRNA 유전자 서열을 갖는 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 패니바실러스 폴리믹사(Paenibacillus polymyxa) 미생물은 국립농업과학원에 기탁된 패니바실러스 폴리믹사 strain KACC 91583P인 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 식중독균은 E. coli O157:H7 또는 살모넬라(Salmonella)인 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 패니바실러스 폴리믹사(Paenibacillus polymyxa)는 E. coli O157:H7에 대해 저해환의 크기가 0.50 ~ 5.00 mm의 항균활성 및 살모넬라(Salmonella)에 대해 저해환의 크기가 0.50 ~ 4.00 mm의 항균활성을 갖는 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 제 1항에 있어서, 상기 조성물을 새싹채소에 처리시 식중독균이 저감화되는 것을 특징으로 하는 식중독균에 대한 항균 조성물.
- 식중독균에 대한 항균활성을 갖는 국립농업과학원에 기탁된 패니바실러스 폴리믹사 strain KACC 91583P.
