(A) 세척한 인삼 또는 인삼 뿌리 1중량부에 대하여 약수 40~50중량부를 넣고 80~85℃에서 8~10시간 유지하는 인삼수 저온 숙성 단계와;
(B) 저온 숙성된 인삼수를 실온으로 서냉한 후, 상기한 인삼수에 8~10시간 동안 현미를 침적하는 불림 단계와;
(C) 불린 현미를 꺼내어 물을 붓고 현미밥을 짓는 취반 단계와;
(D) 취반된 현미밥을 누룽지 제조기를 이용하여 180~230℃에서 3~8분간 양면을 구워 누룽지로 만드는 누룽지 제조단계와;
(E) 제조된 누룽지를 수분 함량 3~5%로 건조시킨 후 평균 직경 3~5mm로 크래쉬한 다음, 저온 숙성시킨 상기한 인삼수를 스프레이하여 크래쉬된 누룽지의 표면을 호화시킨 후, 다시 상기한 누룽지 제조기를 이용하여 180~230℃에서 1~3분간 가열하여 작은 입자로 느슨하게 결합된 인삼 현미 누룽지 형태로 가공하는 후가공 단계.A method for producing ginseng brown rice nurungji comprising the steps of:
