Abstract
Description
도 2는 95% 이상의 이산화탄소 가스 존재 하에 0.175%, 0.25%, 0.5%, 0.75%, 1%의 카제인 나트륨 수용액을 노출시켰을 때 투광도 변화를 보여주는 그래프이다.
도 3은 펙틴 첨가에 의한 카제인 나트륨 수용액의 색 변화를 보여주는 도면이다. 구체적으로, 동일 비율(0.75%)의 카제인 나트륨과 펙틴 수용액을 9:1, 8:2, 7:3으로 혼합한 후 pH를 6.5-3.5의 범위로 조절한 후 색 변화를 측정한 샘플이다.
도 4는 펙틴 첨가된 카제인 나트륨 수용액의 투광도 변화를 보여주는 그래프이다. 구체적으로, 0.75%의 카제인 나트륨 수용액과 0.5%의 펙틴 수용액을 9.9:0.1, 9.875:0.125, 9.85:0.15, 9.825:0.175, 9.8:0.2, 9.775:0.225, 9.75:0.25의 비율로 혼합한 후 95% 이산화탄소 조건에서 투광도 변화를 측정한 샘플이다.
도 5는 상온에서 저장된 김치의 품질 특성인 pH와 적정산도(TA; titratable acidity)를 나타낸 그래프이다.
도 6은 상온에서 저장된 김치의 이산화탄소 발생량을 보여주는 그래프이다.
도 7는 이산화탄소를 발생하는 식품에 노출시킨 후 인디케이터의 투광도 변화를 보여주는 그래프이다.

- 카제인 나트륨(sodium caseinate)을 유효성분으로 포함하는, 이산화탄소 인디케이터.
- 제1항에 있어서,
상기 카제인 나트륨은 등전점 이하에서 응집성을 가지는 것을 특징으로 하는, 인디케이터. - 제1항에 있어서,
상기 카제인 나트륨의 농도는 0.175 내지 1.0 w/v% 인 것을 특징으로 하는, 인디케이터. - 제1항에 있어서,
상기 인디케이터는 수용성 다당류를 추가로 포함하는 것을 특징으로 하는, 인디케이터. - 제4항에 있어서,
상기 다당류는 펙틴(pectin)인 것을 특징으로 하는, 인디케이터. - 제4항에 있어서,
상기 다당류를 0.05 내지 0.125 w/v% 포함하는 것을 특징으로 하는, 인디케이터. - 제1항에 있어서,
상기 인디케이터는 투명, 불투명, 및 침전 형성의 3단계로 이산화탄소 발생량을 지시하는 것을 특징으로 하는, 인디케이터. - 제1항에 있어서,
상기 인디케이터는 기체는 투과하고 액체는 투과하지 못하는 반투막 재질의 외면을 포함하는 것을 특징으로, 인디케이터. - 제8항에 있어서,
