(E) 상기 (D)단계에서 제조된 혼합물을 60 내지 100 ℃ 하에서 가열하여 당도가 54 내지 58 brix가 되도록 농축하는 단계;
(F) 상기 농축한 혼합물을 90 내지 150 ℃에서 1차 살균시키는 단계; 및
(G) 상기 살균된 혼합물을 용기에 충전시킨 후 밀봉시켜 80 내지 90 ℃에서 2차 살균시키는 단계;를 포함하되,
상기 단호박 퓨레는 표피가 제거된 단호박 과육 100 중량부와 물 70 내지 120 중량부를 혼합한 후 아스코르빈산 0.01 내지 10 중량부를 첨가한 다음 단호박 껍질과 유산균녹차추출물로 제조된 단호박 발효액 1 내지 30 중량부를 첨가하여 제조된 것을 특징으로 하는 고구마 스프레드의 제조방법. (A) blending sweet potatoes into hot water;
