2. 발효실 발효공정

발효재료를 준비하는 단계와,
입도 150 메쉬 이하의 황토분말을 식염수에 투입하여 희석시킨 다음에 침전된 황토분말을 걸러내고 남은 지장수를 제조하는 단계와,
상기 발효재료를 미생물을 지장수에 100 : 1의 중량비로 희석한 지장수에 침전시켜 5~10분 정도 담가뒀다가 흐르는 물에 세척하는 단계로 이루어지는 작업실 전처리공정;
상기 작업실 전처리공정을 거친 발효재료와 설탕을 용기에 넣고 이를 혼합하는 단계와, 상기 혼합물을 25℃~40℃의 온도에서 2~3일 간격으로 저어주면서 15~30일 동안 발효시켜 당도가 30~50 브릭이고 산도가 3~4.5 Ph일 때 발효액을 분리하는 발효실 발효공정;
상기 발효실 발효공정을 거친 발효액을 용기에 담아 10℃~20℃의 저온에서 50~90일 동안 숙성시키는 숙성실 저온숙성공정을 포함하여 이루어지는 것을 특징으로 하는 지장수 및 미생물을 이용한 발효식품의 제조방법.A method for producing a fermented food by using a microorganism and a microorganism,
