본 발명에 따르는 동백차의 제조에서 주원료로는 동백꽃과 동백잎을 단독으로 또는 혼합하여 사용하며, 부원료로서 필수 아미노산인 트립토판, 라이신, 비타민류인 A, B, E가 함유되어 항산화(抗酸化) 촉진(促進) 및 체력증강의 효과를 나타내는 옥수수를 팽창(膨脹)시키어 새로운 다공(多孔)을 형성하여 흡수력을 높이고 8% 미만의 수분을 함유한 알파 콘으로 다른 원료를 흡수저장하면서 향미를 개선하는 원료로 선정하고, 단백질의 2/3를 이루면서 영양분을 세포로 전달하는 기능과 세포의 노폐물을 제거하는 기능과 무기질을 흡수하여 뼈와 골격을 이루고 있는 생체(生體)의 중요한 필수기능을 담당하는 물질인 콜라겐을 보조 첨가물로 선정하고, 젖산 축적을 막아 신속한 피로회복과 노화를 방지하고 항산화를 촉진하고 새콤달콤한 대중적 향미로 개선하는 첨가물로 구연산을 선정하고, 생리적 대사기능의 조절과 항산화 및 신속한 피로회복과 향미개선을 위하여 콜라겐과 비타민C를 선정하고, 항산화(抗酸化) 촉진과 달콤한 대중적 월드 향미로 개선(改善)을 위하여 스테비아를 선정(選定 Selection)하여 무설탕으로 고소함을 입안에 품고 새콤달콤함이 조화(調和)된 대중적(大衆的) 월드 향미의 새콤달콤한 동백꽃 잎 차 조성물(組成物)을 구성하는 원료(原料)를 선정한다. 알파 콘(Alpha Corn Powder)은 옥수수를 쪄서 수분이 8% 이하가 되도록 건조한 옥수수를 가루로 한 것을 통칭하는 것으로, 단백질, 지질, 당질, 섬유소, 무기질, 비타민 등의 성분을 함유하며, 피부의 건조와 노화예방, 피부 저항력 향상, 충치 개선 등의 효능이 있다. 콜라겐은 인간을 비롯한 동물의 체내에서 세포와 세포 사이를 메우고 있는 아주 중요한 섬유상태의 경단백질(Albuminoid)이다. 세포가 다수 집합되어 있는 부위에는 반드시 콜라겐이 존재하고 있으며 특히 피부, 뼈, 연골, 혈관 벽, 치아, 근육 등에는 콜라겐이 다량으로 존재하고 있다. 콜라겐(Collagen)은 오래전부터 식용으로 이용되고 있으며, 콜라겐은 18종의 아미노산으로 되어있고, 사람이 콜라겐 및 그 변성 물인 젤라틴을 섭취한 경우에는 다른 단백질과 마찬가지로 소화관 내에서 소화효소에 의해 분해되어 대부분 아미노산의 형태로 흡수된다. 콜라겐(Collagen)은 면역기능을 향상시키고, 세포의 재생작용을 촉진시켜 관절을 튼튼하게 해주며, 피부의 신진대사 활성화 및 보습유지를 통하여 피부미용에 탁월한 효과를 제공한다. 구연산(枸祁酸)은 과일의 씨나 과즙 속에 유리상태의 산으로 함유되어 있고 레몬이나 미성숙 매실(梅實) 감귤 종류에 많으며, 인체 젖산 축적을 막아 피로회복과 노화를 방지하는 효능이 있다. 비타민C는 강력한 생물학적 환원제로 작용하고 콜라겐 형성, 도파민, 노에피네프린, 트립토판 등 신경전달물질의 합성, 카르니틴과 스테로이드 합성, 철의 흡수, 면역기능, 상처회복과 그밖에 엽산, 아미노산, 뉴클레오티드, 콜레스테롤, 포도당 대사에도 관여한다. 최근 국내 대학에서 비타민C 효능에 대하여 새로운 논문을 발표하여 비타민C의 가치를 제시한 내용은 식이섬유와 함께 섭취하면 체중감량 1.5배 이루어진다는 새로운 사실을 발표했다. 주요내용은 비타민C는 피로회복, 노화방지 같은 알려진 효능 외에 다이어트에 직간접으로 영양을 끼친다는 것을 밝혀낸 것에 의미가 있다고 설명한다.스테비아(학명 Stevia rebaudiana)는 쌍떡잎식물(雙子葉植物) 초롱꽃목 국화(菊花)과의 여러해살이풀(허브)이며, 스테비아의 잎에는 단맛 물질인 스테비오사이드(stevioside)를 함유하며, 이는 천연 감미료로 주목받고 있다. 스테비오사이드(stevioside) 성분은 설탕의 약 200 내지 300배의 단맛이 있고, 칼로리도 설탕의 90분의 1로 낮아 다이어트에 효과적인 천연감미료다.본 발명에 의하면 동백 침출차와 액상차의 제조방법이 제공된다.바람직하게, 동백꽃은 싱싱하고 상처가 없는 당일에 수확한 것을, 동백잎은 생육기간에 관계없이 싱싱하고 상처가 없는 당일에 수확한 것을, 알파 콘은 이미(異味) 이취(異臭)가 없고 순도 92% 이상의 것을, 콜라겐은 이미(異味) 이취(異臭)가 없고 순도 95% 이상의 것을, 구연산은 이미(異味) 이취(異臭)가 없고 순도 95% 이상의 것을, 스테비아는 이미(異味) 이취(異臭)가 없는 건조 스테비아를 사용한다.본 발명에 따르는 침출 또는 액상의 동백차 제조에서, 동백꽃, 동백잎 또는 이들의 혼합물로 되는 주원료는 다음과 같은 방법으로 전처리 된다. 동백잎의 전처리선별채취한 동백잎을 절단하여 105±5℃로 가열된 6 내지 10%의 염화나트륨 수용액에 넣어 삶아낸 후 정수한 냉각수로 침지 냉각하고 압축하여 압축분리수와 삶은 동백잎을 분리하고, 분리된 동백잎을 온풍건조실에서 상하교류와 공기의 순환으로 숙성건조하여 볶고, 볶은 동백잎을 15 내지 30 메쉬로 파쇄한 후 여기에 상기 압축 분리수를 투입하여 75 내지 85%의 수분을 함유하는 함습동백잎을 조성하고, 상기 함습동백잎을 50 내지 60℃의 숙성실에서 상하를 교류하고 새로운 산소를 공급하는 조건으로 숙성발효시키는 것을 포함한다. 바람직하게, 동백잎은 절단하기 전에 10 내지 15%의 염화나트륨 수용액에 10 내지 20분간 침지하여 표피(表皮)의 이물질을 제거하는 세척(洗滌)을 하고, 절단은 동력 3상 5마력 절단기로 2 내지 4㎜의 폭으로 길게 절단하여 표면(表面)을 확장(擴張)시킨다. 절단 동백(冬柏)나무잎은 105±5℃로 가열된 6 내지 10%의 염화나트륨 수용액으로 7 내지 15분간 천천히 데치듯 삶아 산화를 방지하고 정수한 냉각수로 침지 냉각하고 삶은 동백나무잎과 침 지 냉각수를 압축분리하여 침 지 냉각수는 10℃ 이하에서 별도 보관관리하고 삶은 동백(冬柏)나무잎은 조직의 팽창으로 이루어지는 다공(多孔)을 형성(形成)하고 푸른 색상을 지속(持續)하면서 동백(冬柏)나무잎에 부드러움을 갖는 삶은 동백나무잎을 조성하고 삶은 동백(冬柏)나무잎은 40 내지 45℃의 온풍건조실에서 30분 마다 상하교류와 공기의 순환으로 2 내지 4시간 숙성건조하여 향미를 개선하고 동백(冬柏)나무잎 조직에 수축(收縮)을 유도하는 건조동백나무잎을 조성하고 자동 볶음 솥에 옥수수 기름으로 청소하고 솥 바닥에 옥수수기름을 매번 바르고 건조동백(冬柏)나뭇잎을 넣고 110±3℃의 온도로 자동 휘저음을 계속하면서 20 내지 30분간 볶아 냉풍으로 냉각하여 조직이 팽창(膨脹)되고 수축(收縮)하는 과정에 의하여 표면(表面)의 확장(擴張)과 새로운 기공(氣孔)에 의한 수로(水路)를 조성하고 향미가 개선된 볶은 동백나무잎을 조성하여 순간 추출이 이루어지게 한다. 동백꽃의 전처리선별채취한 동백꽃을 절단하여 105±5℃로 가열된 6 내지 10%의 염화나트륨 수용액에 넣어 데쳐낸 후 정수한 냉각수로 침지 냉각하고 압축하여 압축분리수와 삶은 동백꽃을 분리하고, 분리된 동백을 온풍건조실에서 상하교류와 공기의 순환으로 숙성건조하여 15 내지 30 메쉬로 파쇄하고 여기에 상기 압축분리수를 투입하여 75 내지 85%의 수분을 함유하는 함습동백꽃을 조성하고, 상기 함습동백꽃을 50 내지 60℃의 숙성실에서 상하를 교류하고 새로운 산소를 공급하는 조건으로 숙성발효시키는 것을 포함한다. 바람직하게, 절단은 동력 3상 5마력 절단기로 4㎜로 절단하는 것이 적당하고, 데침은 동백꽃에 부드러움과 고유의 색상을 지속(持續)하도록 1 내지 3분간의 순간 데침이 적당하고, 파쇄는 동력 3상 5마력 파쇄기를 사용하는 것이 적당하며, 압축분리수는 10℃ 이하로 보관하였다가 파쇄된 동백꽃에 투입하고 동력 3상 10마력 혼합기로 혼합하여 함습동백꽃을 조성하는 것이 적당하며, 숙성건조는 30~35℃의 온풍 건조실에서 30분 마다 상하교류와 공기의 순환(循環)으로 8시간 숙성건조하여 향미를 개선한다. 숙성발효는 향미의 개선과 조직의 팽창으로 기공(氣孔)의 의한 새로운 수로(水路)를 조성하도록 숙성실에서 대략 2시간 마다 상하를 교류하고 새로운 산소를 공급하는 조건으로 4시간 정도 숙성발효하는 것이 적당하다. 동백꽃과 동백잎을 함께 사용할 때는 위와 같이 각각 전처리한 후 혼합하여 사용하거나 또는 위의 전처리 과정에서 파쇄된 동백꽃과 동백잎을 혼합하면서 별도 관리하는 압축분리수를 투입하여 75 내지 85%의 함습량으로 조절한 후 숙성발효시킨 것을 사용한다. 잎과 꽃을 함께 사용하는 경우 꽃에 부족한 성분은 잎에서 잎에 부족한 성분은 꽃에서 상호 보완하는 장점이 있다. 이와 같이 전처리된 주원료는 부원료인 스테비아, 알파 콘, 콜라겐, 구연산 및 비타민C와 배합한다. 이때 스테비아는 건조 스테비아를 5 내지 30 메쉬로 파쇄하여 표면이 확장된 파쇄 스테비아로 만들어 사용하고, 알파 콘, 콜라겐, 구연산 및 비타민C은 미리 혼합하여 사용하는 것이 바람직하다. 이러한 예혼합은 동력 3상 10마력 혼합기로 15분간 혼합이 적당하다. 주원료로서 동백꽃과 동백잎을 함께 사용하는 경우에는 동백꽃 10~90중량%와 동백잎 90~10중량%의 비율로 하는 것이 바람직하다. 다음, 동백 전처리물, 알파 콘-콜라겐-구연산-비타민C 혼합물 및 상기 파쇄 스테비아를 혼합하여, 동백 전처리물 41 내지 70중량%, 알파 콘 55 내지 9중량%; 콜라겐 1 내지 5중량%; 구연산 1 내지 4중량%; 비타민C, 1 내지 4중량%, 및 파쇄 스테비아 1 내지 8중량%로 되는 동백차 조성물을 제조한다. 동백차 조성물의 제조를 위한 혼합은 동력 3상 10마력 혼합기로 30분간 혼합이 적당하다. 이와 같이 제조한 동백차 조성물은 성형기에서 4 내지 6㎏/㎠의 압력으로 부피를 압축하여 1 내지 2㎜로 크기로 성형(成形)한다. 이와 같이 하면 알파 콘, 콜라겐, 구연산, 비타민C, 스테비아가 동백꽃 조직 속의 기공(氣孔)으로 흡수 전이(轉移)되어 기능의 상승과 향미가 조화롭게 변화된다. 다음, 성형된 동백차 조성물을 30 내지 35℃의 온풍건조실에서 교반하에 새로운 공기를 주입하면서 수분 함량 5% 이하로 숙성 건조한다. 이와 같은 숙성건조를 거치면 조성물의 표피(表皮)가 산화(酸化)에 의한 갈변(褐變)으로 흑갈색(黑褐色)을 바탕으로 하고 알파 콘과 콜라겐의 응집력(凝集力, Cohesion)에 의하여 원료의 조직이 서로 결속(結束)하여 부피가 압축(壓縮)되고 조성물의 표피에 피막(皮膜)을 형성(形成)하여 비타민C의 산화(酸化)를 방지된다. 바람직하게, 온풍건조실에서 1시간마다 성형혼합조성물를 뒤집고 새로운 공기를 주입하면서 25시간 천천히 숙성 건조를 하는 것이 적당하다. 이와 같이 숙성 건조한 동백차 조성물은 1 내지 2㎜로 파쇄(破碎)하고 살균하여 침출차로 제조할 수 있다. 바람직하게 살균은 고온순간살균법을 응용(應用)한 다용도(多用途) 다관(多管) 살균기(殺菌器)로 스크루 회전의 속도와 파이프로 된 살균 통의 온도에 따라 90℃에서 30초로 상업적(商業的) 살균을 하여 향미(香味)를 보존(保存)하는 것이다. 침출차로 제조하기 위한 포장은 용도(用途)에 따라 천 또는 여과지(濾過紙)에 1g씩 자동(自動) 포장기(包裝機)로 주입하여 1회용 2중 티백을 조성하고, 1회용 2중 티백을 은박지 및 폴리에틸렌필름 또는 컵(盞 Cup)으로 방향(防香) 방습포장(防濕包藏)으로 포장(包裝)하고 검사한 후에 상자에 넣는 방법을 이용할 수 있다. 이와 같이 제조한 침출차는 시간(時間)과 공간(空間)에 관계없이 냉, 온수 겸용(兼用)으로 설탕(雪糖)이 없는 저칼로리로 조성된 티백 하나를 100㏄ 온 냉수에 넣고 2 ~ 5회 휘저어 마시면 고소함이 입안에 머무르면서 새콤달콤함이 조화(調和)된 대중적 향미를 제공한다. 또한 상기와 같이 숙성 건조한 동백차 조성물은 다음과 같은 방법으로 거쳐 액상차로 제조할 수도 있다. 즉, 숙성건조된 동백차 조성물을 자동추출탱크에 넣고 추출용매로서 30 내지 55%의 알코올을 상기 조성물 중량기준으로 90 내지 110배의 양으로 상기 자동추출탱크에 넣어 110 내지 130℃에서 10 내지 15㎏/㎠(壓力)으로 120 내지 180분간 추출(抽出)하고, 얻어진 추출물을 여과한 후, 얻어진 여과액을 1 내지 65 Brix로 농축(濃縮)하고 알코올을 회수한 후, 농축액을 살균하여 액상차로 제조할 수 있다. 추출(抽出)은 계절에 따라 용매(溶媒)
의 비율과 용매(溶媒)의 농도를 조절하여 추출로 발생하는 향미의 변화를 방지하는 것이 바람직하다. 상기 여과에는 다음 중의 한 방법을 이용하는 것이 바람직하다: 150 메쉬(Mesh)의 자동 흡입 여과기(濾過機)에서 여과하는 방법; 150 메쉬(Mesh)의 자동 흡입 여과기(濾過機)에서 1차 여과한 후 200 메쉬(Mesh)의 자동 흡입 여과기(濾過機)에서 2차 여과하는 방법; 또는 150 메쉬(Mesh)의 자동 흡입 여과기(濾過機)에서 1차 여과하고 200 메쉬(Mesh)의 자동 흡입 여과기(濾過機)에서 2차 여과한 후 12 내지 24시간 침전(沈澱)하는 방법.농축은 감압조건의 자동농축기에 넣고 교반기의 회전(回轉)을 가감(加減)하여 비말 동반 손실을 억제하는 것이 바람직하다. 살균은 고온순간살균법을 응용(應用)한 다용도(多用途) 다관(多管) 살균기(殺菌器)로 스크루 회전의 속도와 파이프로 된 살균 통의 온도에 따라 약 85℃에서 약 30초 동안 살균하는 것이 적당하다.이와 같이 살균한 후에는 포장하여 제품화한다. 포장에는 내열성 병에 자동으로 포장(包藏)하여 냉각으로 진공(眞空)을 유도(誘導)하는 방법을 이용할 수 있다. 또한, 순도(純度)와 용도(用途)에 따라 앰플(Ampoule)이나 폴리에틸렌필름 또는 은박 주머니(Pouch)에 5 내지 250㎖로 자동으로 포장(包藏)하는 방법을 이용할 수도 있다. 이와 같이 제조되는 동백 액상차는 시간과 공간에 관계없이 마시는 맑은 갈색을 바탕으로 하는 무설탕(無雪糖) 저칼로리로 조성된 고소함이 입안에 머무르면서 새콤달콤함이 조화(調和)된 대중적(大衆的) 향미를 제공한다. 본 발명의 실시를 위한 구체적인 내용으로 조성한 새콤달콤한 동백(冬柏)꽃 잎 차 조성물의 관능에 의한 비교평가는 표 1과 같다.
