상기 실시예 1과 동일한 원유를 사용하되 유취제거공정을 거치지 않고 그대로 살균처리하여 만든 산양유 제품(비교예)과, 상기 실시예 1에서 제조한 본 발명의 산양유 제품(실시예 1)을 샘플로 하여 유취의 정도를 실험하였다. 실험은 관능테스트로 하였으며, 각 연령별로 30명씩(남15명, 여15명)을 대상으로 하고, 식사전오전 11시∼12시에 테스트를 실시하였다. 관능의 주요내용은 산양유취에 대해 4단계별 점수를 기준으로 하여, ①전혀 모르겠다 ②거의 모르겠다 ③미약하게 난다 ④강하게 난다로 구분하였으며, 이때 ③, ④ 는 산양유취로 판정하였다. 산양유 고유의 유취를 느끼는 사람수와 점수를 퍼센트로 나타내었으며, 결과는 다음의 표 2와 같다.Using the same crude oil as Example 1, but without sterilization process goat milk products (Comparative Example) and goat milk products of the present invention prepared in Example 1 (Example 1) The degree of odor was tested.
