Abstract

PURPOSE: A method for preventing decolorization of a food product using green plants and a food product produced thereby are provided, therefore natural pigments is applied to food products without any damage. CONSTITUTION: A method for preventing decolorization of a food product using green plants comprises the steps of: dividing the raw material of a green plant processed food into two groups, one has the acidity of 5% or more and another has the acidity of 5% or less; separately preparing granules of the two groups; and separately drying the granules and mixing them together, wherein the drying temperature is 45 to 50 deg. C; and the green plant includes fruits, spirulina, chlorella or vegetables.
