Mfg.Co., USA)를 사용하여 측정하였다.보수력 측정 방법보수력(Water holding capacity:WHC)은 여지 압착법(Ryoichi,1993)으로 측정하였다.가열감량 측정방법가열감량(Cooking Loss:CL)은 닭 가슴살을 떼어 80℃의 항온수조에서 40분간 가열하여 가열전후의 중량차로 계산하였다.지방산 분석닭 고기의 지방산 분석을 위한 지질 추출은 Folch 등(1957)의 방법에 준하여 분석하였다. 20g의 닭 가슴살 시료를 Folch 용액(Chloroform과 Methanol = 2:1)150ml에 넣고 5분간 균질화한 후 여과지(No.2)로 여과하고 원심분리(771g 10분간)를 한다.상기 원심분리를 한 후 상층액은 버리고 하층액에 NaSO4를 첨가하여 여과하고 농축기로 클로로포롬(chloroform)을 날려버린 후 지질을 회수하였다.상기 추출된 지질은 모리슨(Morrison)과 스미트(Smith)(1964)의 방법에 준하여 전처리 한 다음 지방산을 분석하였다. 즉, 추출한 지질 5mg 정도를 채취하여 메틸레이티션 튜브(Methylation tube)에 넣어 0.5N NaOH 1ml를 첨가한 후 100℃에 15분간 가열하여 냉각시킨다.붕소 트리플루리드 메탄놀(Boron trifluoride methanol) 14% 솔루션(solution)3㎖를 넣어 다시 15분간 가열 후 냉각하여 시험관에 옮겨 힙타니(heptane)1㎖ 및 5㎖ 염화나트륨(NaCl) 포화용액을 첨가한 후 혼합하여 층이 분리 될 때 까지 정치하고 상등액을 채취하여 V튜브에 넣어 -80℃에 보관하면서 오토 샘플러(Auto-sampler)가 장착된 가스 크로마토그래피(Gas chromatography)를 이용하여 분석하였다.이때 사용된 지씨 컬러(GC column)은 카피라티 컬럼(capillary column)을 사용하였으며 캐리어 가스(carrier gas)로서는 N2를 이용하였다.상기 측정방법에 의거하여 시료분석에 의한 표1의 성분분석 결과를 얻기 위해 실험한 실시예를 살펴보면 표2와 같다.[표 2]상기 표2의 한약A와 한약B는 본 발명의 한약재가 첨가된 사료를 먹인 큰닭의 가슴과 다리살을 시료로 채취하여 실험한 것이며, 닭A와 닭B는 한약재를 첨가하지 않은 보통 닭의 가슴과 다리살을 시료로 채취하여 실험하여 표1의 육질분석 결과가 나온것이다.상기와 같이 한약재가 첨가된 사료를 먹은 닭은 성장속도가 일반 닭에 비하여 빨리 성장하여 출하를 보통닭에 비하여 단축되었으며, 산란닭의 경우 계란에도 한방성분이 함유된 계란은 노른자가 주황색에 가까운 진노랑이고 일반사료를 먹인 닭의 노른자는 엷은 노랑색으로 나타남을 알 수 있었다.이렇게 본 발명은 한약재 첨가 사료를 먹인 닭의 계란은 영양가 높은 계란임을 알 수 있으며, 또한 소비자에게 고품질의 계란과 계육을을 공급할 수 있게 된 것이다.Looking at the measurement method experimented in the present invention, the shear force measurement method (Warner-Bratzler shear force (WBS)) to remove the chicken breast and heated to maintain the internal temperature at 75 ℃ for 10 minutes in a refrigerator below 5 ℃ 24 hours was measured by using a core (core) of 0.5inch 2 gugyeong eseo sample was allowed to stand using the shear force group (Warner-Bratzler shear force meter (GR Elec.
