Abstract

PURPOSE:To obtain the titled easily handleable thickener having excellent dispersibility and solubility, by mixing a thickening material containing xanthan gum with a specific liquid emulsifier and a mixture of dextrin and a water-soluble gelatin. CONSTITUTION:The objective thickener for food is produced by mixing (A) 1pt.wt. of a thickening material composed of xanthan gum or a mixture of xanthan gum and other natural gum such as guar gum with (B) 0.2-9pts.wt. of a dextrin having a DE of 2-35 or a mixture of said dextrin and a water-soluble gelatin having an average molecular weight of 3,000-10,000 and (C) >=0.02pt.wt. of a liquid emulsifier which is a mixture of a glycerol fatty acid ester, a sorbitan fatty acid ester, a propylene glycol fatty acid ester, a sucrose fatty acid ester and/or lecithin.
