および曲げ強度が弱い欠点がある。そのため、こ
のようなシート状加工食品は、その流通段階また
は使用中は無論のこと製造から出荷の段階におい
ても壊れやすく、その取扱いが面倒であつた。ま
た熱と乾燥で固く変性した節や煮干しを切削した
もの(削り節)を原料として使用しているため、
食感はパサパサして良くない。
