Abstract
PURPOSE: To enable microwave oven-heating cooking by setting the quantity of fat to be added from 10wt.% to 60wt.%, the quantity of water to be added from 40wt.% to 65wt.% and quantity of fat to be added/quantity of water to be added from 1:0.8 to 1:4.8 in the compounding of dough in respect to raw material powder. This mixed dough is primarily fermented, thereafter, gas is released and the dough is molded and secondarily fermented.
