Abstract

PURPOSE:To prevent the deterioration of the palatability of HIJIKI (Hizikia fusiforme, a kind of brown algae) caused by the softening of HIJIKI tissue, by immersing dried HIJIKI in an aqueous solution of calcium and subjecting to boiling, cooking and sterilization. CONSTITUTION:Dried HIJIKI is immersed in an aqueous solution of calcium (preferably having a calcium ion concentration of 6.5-65mg%) preferably for 3-24hr and is subjected to boiling, cooking and sterilization. The calcium aqueous solution is preferably an aqueous solution of calcium lactate.
