Abstract

PURPOSE:To obtain a fat-containing composition free from segregation and feathering phenomena, by uniformly mixing a soluble carbohydrate, a soluble whey protein, powdered milk, deanionized whey, oil and fat and enzymatically decomposed lecithin and drying the obtained mixture. CONSTITUTION:A soluble carbohydrate, a soluble whey protein and powdered milk are dissolved in warm water and mixed with deanionized whey. The mixture is added with preparatorily prepared mixture of vegetable oil and fat and/or animal oil and fat and enzymatically decomposed lecithin. The obtained mixture is homogenized and dried to obtain the objective fat-containing composition. The enzymatically decomposed lecithin is used as a natural emulsifier in place of a synthetic compound such as sorbitan fatty acid sodium salt. If necessary, the composition may be further incorporated with yolk oil. The enzymatically decomposed lecithin is obtained by decomposing a lecithin- containing sludge of an oil and an aqueous system with a lipase to hydrolyze the fatty acid ester into lyso.phos.lipid.
