CONSTITUTION:Pickle of white eggplants are produced by the following processes a and b. Namely, (a) a preliminarily pickling process wherein white eggplants are immersed in a solution having high salt concentration and (b) a desalting process wherein the preliminarily white eggplants are soaked in a seasoning solution having low salt concentration plural times and salt content in the material is gradually decreased into about 3-4wt.% salt content.
