Abstract

PURPOSE: To maintain for several hours the flavor of cooked food that should avoid humidity immediately after it is cooked by enabling an atmosphere in a storage cabinet to be circulated by a circulating air pipeline in which a dehumidifying means and a temperature regulating means are provided. CONSTITUTION: A circulating air pipeline 10 is connected to a storage cabinet 2, and a dehumidifier 6 and an air heater 8 are provided in the circulating air pipeline 10 so that circulating air dehumidified and adjusted to an appropriate temperature can be circulated within the storage cabinet 2 by a circulating blower 5. Cooked food that should avoid humidity, such as those just fried, is stored in the storage cabinet 2 with racks 1, so as to prevent the first food from being left in general air for many hours and thereby losing its flavor. The circulating air dehumidified and adjusted to the appropriate temperature is straightened by plenum chambers 3, 4 from the circulating air pipeline 10 and evenly distributed into the storage cabinet 2. Air containing steam evaporated from the cooked food leads via the circulating blower 5 to the dehumidifier 6 in which a solid dehumidifier is packed in a cartridge 7, the water content is removed there, and the air is further adjusted in temperature by an electric heater 8 and circulated and supplied to the storage cabinet 2.
