Abstract

PURPOSE:To mechanically prepare a spherical ice cream, by filling a semifluid soft ice cream in a hemispherical mold and freezing the cream while preventing the flattening of the lower part of the sphere. CONSTITUTION:A spherical ice cream composed of a semifluid 1 as a core, a chocolate cream 2 surrounding the circumference of the core and cocoa powder 15 and nut particles 16 applied to the surface of the chocolate cream is prepared by the following process. A semifluid 1 is extruded through a central nozzle of a concentrically arranged nozzles, a hemispherical mold is placed immediately below the nozzle and a chocolate cream 2 is executed through the outer nozzle. The extruded material composed of the semifluid 1 as a core and the chocolate cream 2 surrounding the semifluid is filled in a hemispherical mold and formed into a spherical form. After freezing and hardening the cream, it is released from the hemispherical mold. The obtained ice cream having nearly spherical form is coated with a coating material in a rotary pan to improve its sphericity.
