Abstract

PURPOSE:To obtain a cryogenic brine which has excellent capability of cooling an object to be refrigerated to a very low temperature for instantaneous freezing and causes no toxicity to the object, by incorporating a citric acid derivative into an aqueous ethanol of a specified concentration. CONSTITUTION:A citric acid derivative is incorporated into an aqueous ethanol of a concentration of 60% or lower to give a cryogenic brine capable of cooling an object to be refrigerated to a low temperature of about -72--40 deg.C. Examples of the citric acid derivatives include those of formulas I, II, III, and IV, used individually or as a mixture with one another. Since this cryogenic brine has neither toxicity nor bitterness, it can be used not only for an indirect refrigerator also for a direct refrigerator for refrigeration of an object such as foods.
