Abstract

CONSTITUTION:A microorganism having the ability to produce lipase is cultivated in a culture medium, filtered off and washed with water several times to remove culture medium components, etc., contained in the microorganism. When the microorganism is utilized for hydrolytic reaction of fats and oils or ester synthetic reaction of glycerol or other alcohols with fatty acids, the microbial cells washed with water are directly used as a catalyst. When the microorganism is used for ester interchange or ester synthetic reaction in an oil system, the microbial cells washed with water are washed with a polar solvent, such as acetone, to replace water contained in the microbial cells with the polar solvent and dehydrate the microbial cells.
