Abstract

PURPOSE:To obtain a heat-resistant albumin protein having excellent solubility to clear water, etc., exhibiting heat resistance even in dissolving into a salt solution and suitable in a raw material for cosmetic or food, by linking an albumen protein with a surfactant. CONSTITUTION:An albumen protein is linked with a surfactant (preferably sodium laurylsulfate, etc.) to provide the aimed product. For example, using 30-100pts.wt. clear water and 0.1-10pts.wt. surfactant to 100pts.wt. albumen, the surfactant is dissolved in the clear water and the solution is then mixed with the albumen and further the mixture is stirred at 20-30 deg.C for 30-120min to carry out the bonding reaction.
