Abstract
PURPOSE:To obtain the title product which is nontoxic, tasteless and odorless and is excellent in surface activity, an ability of dispersing particles and low foaming property, by hydrolyzing a specified vegetable protein with an alkali and partially decomposing the hydrolyzate with an acid, an oxidizing agent, an enzyme and a reducing agent. CONSTITUTION:At least one vegetable protein derived from wheat, corn or soybean (A) is hydrolyzed by heating it in a dilute aqueous alkali solution (B), and the hydrolyzate is partially decomposed by a combination of at least one of treatments with an acid, an oxidizing agent, an enzyme and a reducing agent (B) to obtain the title product which is light yellow to reddish brown and having a weight-average MW (according to gel filtration) of 500-90000, an isoelectric point of 3.9-5.0, an ultraviolet absorption near 260-280nm, infrared absorptions near 1400, 1630 and 3400 cm<-1>, being soluble in water and insoluble in, e.g., CH3OH, coloring in xanthoprotein reaction and ninhydrin reaction, having a pH buffering action (2-25ml of 1N-hydrochloric acid is necessary to lower the pH of 100ml of a 5wt.% aqueous solution from 6 to 2), a strong surface tension (when 0.1wt.% this product is added to deionized water, its surface tension is decreased to 50dyn/cm or below), a strong emulsifying power (when 1g of this product is added to 100g of water/soybean oil mixture containing 30wt.% soybean oil, it can be completely emulsified).
