Abstract

PURPOSE:To squeeze water from a bean curd, by mixing natural bittern to hot soya milk, uniformly pouring the obtained mixture on a moving belt conveyor made of a thick filter cloth and pressing the produced bean curd with rollers placed above and below the conveyor. CONSTITUTION:Natural bittern is mixed to a soya milk heated in a soya milk tank 1 and the mixture is agitated. The soya milk in the soya milk tank 1 is transferred through a hopper 2 at a controlled rate and uniformly poured on a moving belt conveyor 4 made of a thick filter cloth 3. The produced bean curd is pressed with pairs of rollers 5 placed above and below the conveyor 4 and having gradually narrowing gaps to remove excess water from the bean curd. The obtained bean curd is mechanically cut into prescribed size. If necessary, heat-treated animal protein, vegetable and flavor are mixed into the above mixture in the hopper 2 according to the taste to obtain a bean curd product having various tastes and flavors. The bean curd can be preserved in frozen state without changing the shape, taste and flavor. Water can he squeezed from bean curd by this process without lowering the taste, flavor and protein content of the curd.
