ま揚げるもの即ち絹揚げが好まれるようになつて
きたが絹こし豆腐は木綿豆腐に比べ柔わらかく非

こし豆腐を製造した後、作業者が注意深く、絹揚
に適した大きさに手作業にて一個づつ切断し、こ
れを布を敷いた上に並べ、さらにその上に別布を
重ね、この上下布に挾まれた豆腐が布のもつ吸水
性にて脱水されるようになす。吸水した布を何回
も絞つてこれを繰り返して所望の含水率まで脱水
している。その後これを油揚機に投入して所望の
絹揚げとする。このため製造工程は手作業が多く
製造コストが高く、しかも非能率的である。

方向に切断し、各片を夫々適当に離間せしめる切
断離間工程と、この切断離間工程に隣接して配設
され、吸水布製ベルトを上下に配設し、かつこれ
に脱水ロールを具備すると共に、この上下両ベル
トを同期して駆動することによより上方のベルト
重量によつて自動的連続に脱水さしめるようにな
つた水切り工程と、これに隣接した自動油揚機の
油揚工程とを一連に配設して構成され連続的に製
造される絹こし豆腐を自動的に切断し、かつ吸水
性布製ベルトによる連続脱水を連続して豆腐を壊
すことなく、しかも風味のよい絹揚を衛生的にか
つ自動的に製造せんとするものである。

実施例 次にこの発明を図面に示した実施例によつて説
明する。図に於て1は豆腐連続製造機でエンドレ
スベルト1aに凝固槽となる仕切り1bを多数定
ピツチで突設し、この仕切り1bをベルトと長手
方向両側に対設固定された長仕切板1c,1c間
をベルトの駆動にてゆつくりと移動するようにな
すと共に、この仕切り1bと長仕切板1c間に形
成される各凝固槽内に所要量の豆乳とそれに適量
の凝固剤(にがり)等を注入撹拌される。そして
この仕切り1bが10〜30分あるいはそれ以上かか
つて移動する時豆乳は凝固して絹こし豆腐が製造
される。この凝固工程の終端部には切断分離工程
2が隣接される。この工程には製造された絹こし
豆腐を製するに適した大きさに縦刃2bと刃2a
横にて切断され、油揚工程で互いに接合されない
ようにふさわしい〓間を保つように一個づつ分離
せしめる。これは固定された縦刃2bに分離板2
cを設け、縦刃2bにて切断された豆腐が移動す
る時この分離板にて自然に分離されるようにな
す。この移動は凝固工程と次の水切工程間を水切
工程側が低くなるような落差をつくようにする
か、又はベルトコンベア等にて強制的に行なうも
のである。

一部に表裏両面を挾持して脱水する脱水ロール3
f,3fを配して成り、かつこのエンドレス状の
ベルト3eは下部のベルトコンベア上を一乃至2
以上配設し、このベルト3eの重量によつて下部
ベルトコンベア上に載置された豆腐上にかぶせら
れるようにし、自然に吸水と水切りを行なうよう
になし、吸水したベルト3eは下方のベルトコン
ベアと同期して連続駆動される時脱水ロールにて
脱水して連続的に水切りを行なえるようになす。
なお下方の脱水ローラ下方には脱離水槽を設けて
外部に排出せしめるようになす。

にて連続的にしかも自動的に水切脱水を行うため
絹揚を自動的に連続的に製造することができると
共に従来に比べ作業者の手作業を省き衛生的にか
つ安価に製造できる効果がある。

連続的に凝固させる豆腐連続製造機と、これに連
続されると共に凝固された豆腐を絹揚げに適した
大きさに切断する刃及び縦刃に連設される分離板
とよりなる切断分離装置と、切断分離された豆腐
を搬送する下部ベルトコンベアの上部に吸水布製
ベルトを配設しかつ同期的に駆動される両ベルト
コンベア、ベルト間にて豆腐を挾んで吸水布製ベ
ルトの重量にて吸水脱水を連続的に行う水切り装
置と、水切り後の豆腐を油で揚げる油揚機とを一
連に配設してなることを特徴とする絹揚の連続自
動製造装置。
