関するものである。

従来例の構成とその問題点 従来、ごはんを炊いた後の鍋底には、おいしく

であつたが、業務用等の炊飯器には商売上の制約
があり、どうしても焦げのできない炊飯器が望ま
れていることからいわゆる炊飯シートなるものを
利用せざるを得ない状況にあつた。この炊飯シー
トなるものには、アルミプレートで作られている
場合と、テフロンガラスシートで作られている場
合が主なものである。アルミプレートの場合、鍋
底とアルミプレートの密着が確実でなければ、相
互の熱伝導並びに対流が十分でなくなりいわゆる
炊きむらの多いごはんとなりやすく、加工上の精
度及び取り扱い上の注意に十分配慮する必要があ
り、業務用等の利用頻度の高い機器には実用上使
用することが困難であつた。テフロンガラスシー
トやテフロンシートの場合、ごはんの出来具合は
炊飯シートのない場合と比較しても大差なく良好
な炊き上がりとなるが、コストが高いことや耐久
性の点で破れや切りさかれ等の欠点があつた。ま
た、両者共通的に言えることは、業務用等に使わ
れる場合、忙しさの中で、炊飯シートを洗わずに
使われる場合が多々発生しているが、この場合炊
飯シートの穴にごはん粒がこびりつく。炊飯シー
トは鍋底に敷いて使う部品であるがためと、加熱
源が鍋底の下方に位置している関係上、熱対流が
鍋底から上方に移動することから通常数mmの穴を
多数個設けた形状となつているが、ごはん粒が穴
にこびりついたまゝで使用すると、鍋底と炊飯シ
ートの間で対流が多く発生し、肝心な米粒への対
流が不十分となり、鍋の外底面中央部付近に接触
しているサーモスタツトの温度検知能力が低下す
ることからごはんの炊き上げにムラが出来やすく
なるという問題があつた。

合の動作を説明すると、炊飯シート16の中央部
周辺の貫通穴を他の貫通穴より大きくしている関
係上、炊飯シート16と鍋3との間の熱対流は炊
飯シート16の中央部付近では十分に対流し、ご
はん粒により目づまりしていてもごはん粒より大
きめの穴があいているため、熱対流は周辺部と中
央部とでの差があまりなく炊飯時の炊きムラ等の
発生が見られない。また、鍋3外側底部中央に
は、感熱装置が取り付けられている関係上、ヒー
タ10からの熱エネルギーはヒータ10からの距
離が大きいと同時に、感熱装置により冷却される
構造のため鍋3中央には不足気味となるが、炊飯
シート16の中央部付近での穴を大きくしていれ
ば、鍋3内側底部中央と炊飯シート16の間の熱
対流は大きくなり、熱対流の鍋3全体への均一化
が図れ、ごはんの出来上がりが良好となる。
