るものである。

本考案の目的は、パン生地の丸目加工を行う際

パン生地を丸目加工する手段の一つとして、オ
ーバーヘツドプルフアーにより中間醗酵を終了し
たパン生地を、対向する二つの円筒体からならモ
ルダーの間を通過させながら適宜の厚さに圧偏す
ることにより生地中の余剰のガスを除去し次いで
適宜の丸目機により丸目加工を行うという方法が
行われている。前記した方法を実施するための装
置として従来より用いられているパン生地の丸目
機としては、適宜の外径を有する金属製の円筒体
乃至棒状体からなるモルダーをその長さ方向に沿
うようにして回転自在に対向させ、前記した二つ
のモルダーはその間隔を自由に調整できるように
構成しており、またモルダーの下面には丸目機が
圧偏された生地の落下を待ち受けるように位置さ
せられているというものであつた。これらの装置
は、正確な仕上げ品を得るためにパン生地の付着
を防止しながら作動することが必要であるが前記
したモルダー中を通過するパン生地は圧偏中に生
地の一部がモルダーに付着残留してしまうことが
多く、表皮剥離が原因で圧偏されたパン生地中の
ガスが必要以上に除去されることとなつたり成形
不良を起こすことが多かつた。これらの問題を解
決する手段としてはモルダーの表面をメツキ仕上
げして平滑表面としたり或いはモルダーの表面に
テフロン(登録商標)のような弗素樹脂の薄膜に
よる被膜を形成するなどの方法を講じていたが未
だ完全とはいえず、最も信頼できる方法としてモ
ルダーの圧偏加工面にドクター或いはスクレーパ
ーと呼ばれる「掻き落とし板」(図示しない)を
装着しているが、ドクター機構を装着する場合に
は装着に伴い機構が複雑になることは勿論のこと
ドクターと加工面との間隙を正確に維持すること
が必要でありこの間隔調整の精度を上げるために
煩雑な作業を要求されるという欠点があつた。
