体を介して一対の電極板を押圧せしめたことを特徴とす
る通電加工食品の製造装置としたものである。

食品材料と密接する含塩水接電体を介して一対の電極板
を押圧しながら通電を施して、複数に区画充填された生
の食品材料を一度に熟熱殺菌処理したことを特徴とする
通電加工食品の製造方法
