Description
この発明は噛みはじめにゼリー様の食感を呈
し、かつ、その後ガムベースの食感へと移行して
いくゼリーチユーインガムおよびその製法に関す
るものである。
従来、ゼリーを使用したチユーインガムとして
特開昭55−165755公報に記載されているゼリーセ
ンター入りチユーインガムがある。このゼリーセ
ンター入りチユーインガムは、ゼリー形成性物
質、澱粉誘導体、繊維素誘導体、蛋白質およびそ
の他の食用増粘剤からなる群から選ばれる1種も
しくはそれ以上の増粘剤をセンターの香味液に添
加し、これをチユーインガム成分で被包すること
により製造されるものである。
このセンター入りチユーインガムは、センター
の香味液が咀嚼時に一時に出てきてチユーインガ
ム成分の糖の味と交わり合うため、味がゼリーの
特有の味とはなつていなかつた。すなわち、セン
ターの香味液は、咀嚼時にチユーインガムベース
の糖分と交じり合うため、そのゼリーの味がうち
消されていた。また、このように、このセンター
入りチユーインガムは、センターとなる香味液の
ゼリーの味がチユーインガムベースの糖分の味と
交じり合つて出てくるためセンターの香味液のゼ
リーの味と、チユーインガムの味とを二段階に楽
しむということができなかつた。
この発明は、このような事情に鑑みなされたも
ので、ガムベース成分と糖類成分を主成分とする
チユーインガムにおいて、糖類に代えてゼリー成
分が含有され、上記ゼリー成分とガムベース成分
とが混合状態になつているゼリーチユーインガム
を第1の要旨とし、このゼリーチユーインガム
を、ガムベースを加熱溶融してこの溶融ガムベー
ス中にゼリー液を添加し、ゼリー液のゲル化を防
止しうる温度条件下において撹拌して溶融ガムベ
ースとゼリー液とを混合し、この混合物を賦形し
冷却することにより製造することを第2の要旨と
するものである。
すなわち、このゼリーチユーインガムは、ガム
ベース成分粒子とゼリー成分粒子とが渾然一体化
されているため咀嚼時に水溶性成分であるゼリー
成分が溶出してきて最初にゼリーの食感を呈し、
ついで水不溶性成分であるガムベース成分により
チユーインガムの噛み心地を呈するものである。
しかも、このゼリーチユーインガムは、チユーイ
ンガムの基礎成分であるガムベース成分とゼリー
成分とからなつていてチユーインガム成分である
糖分を含んでいないため、ゼリー成分がチユーイ
ンガム成分の糖類の味と交じり合うことがない。
すなわち、このゼリーチユーインガムは、ゼリー
成分の味だけが現われてきて、そのゼリー成分の
味のあとにガムベース成分のチユーイング性が現
われてくるものである。したがつて、ゼリー成分
の味が糖類の味によつてうち消されるということ
がない。
つぎに、この発明を詳しく説明する。
この発明のゼリーチユーインガムのガムベース
成分となるガムベースとしては、高重合度の酢酸
ビニル樹脂と、ポリイソブチレン樹脂と、ロジン
のグリセリンエステルを主体とし、これにワツク
ス、食品乳化剤、天然ゴム、無機充填剤等を適宜
量添加した風船ガム用のガムベースを用いること
が好ましい。
高重合度の酢酸ビニル樹脂としては重合度が
450〜1000程度のものを用いることが好ましく、
ポリイソブチレン樹脂としては分子量が5000〜
20000程度のものを用いることが好ましい。
この発明のゼリーチユーインガムには、水分に
富んだゼリー成分が含まれていることから咀嚼中
に軟化現象を生じやすい。これを避けるために、
上記ポリイソブチレン樹脂の添加量を通常の風船
ガムのガムベースよりも8〜18%(重量、以下同
じ)多目に設定し、ガムベースの15〜25%になる
ようにすることが好ましく、かつ天然ゴムをガム
ベースの3〜5%添加することが好ましい。
このようにすることにより、咀嚼時の軟化現象
の発生が防止されるようになり、良好な咀嚼感が
得られるようになる。なお、この発明に用いるガ
ムベースとしては上記のようなガムベース以外
に、通常の板ガム用ガムベースを用いることもで
きる。
ガムベースの配合量は、ゼリーチユーインガム
全体の25〜40%になるように設定することが好ま
しく、最も好ましいのは30〜35%の範囲内であ
る。ガムベースの配合量が25%未満になると軟化
現象を生じやすくなり、逆に40%を超えると過度
な弾力性がでてきて良好な食感が得られないとい
う傾向がみられるからである。
この発明のゼリーチユーインガムのゼリー成分
を構成するゼリーは砂糖と水飴とゲル化剤を主要
成分とするゼリー液を用いて構成される。この場
合、砂糖と水飴の相互の比率は砂糖/水飴=50/
50〜70/30に設定することが好ましい。最も好ま
しいのは60/40〜65/35である。
ゲル化剤は通常のゼリーに使用されているもの
が使用される。例えば、ゼラチン、ペクチン、ア
ラビアガム、寒天等があげられる。ゼリー液の調
製は公知の方法によつて行われる。この場合、香
料や色素等の他の原料が適宜添加される。
この発明のゼリーチユーインガムは上記の原料
を用い、例えば、つぎのようにして製造される。
まづ、上記のようにして調製されたゼリー液を準
備するとともにガムベースを準備する。この場
合、ゼリー液はゲル化しない温度に保持しておく
必要がある。
つぎに、上記のガムベースを100℃程度に加熱
して溶融し、この溶融ガムベースにゼリー液を添
加して全体が均一になるまで激しく撹拌する。こ
の撹拌時においてゼリーのゲル化するのを防ぎ、
また、均一混合の目的を達成するため、全体の温
度を80〜100℃に保つことが望ましい。最も好ま
しいのは90〜95℃の温度である。つぎに、この混
合物をスターチモールドに充填する。この際、混
合物の温度を90〜95℃に設定しておくことが望ま
しい。混合物の温度が90℃未満になると曳糸をお
こして充填が困難になり、また、95℃を超えると
製品に軟化現象がおきやすくなるからである。こ
のようにして、スターチモールドに充填された混
合物を24時間室温で放置して冷却し、冷却後、モ
ールドから剥離することによりゼリーチユーイン
ガムが得られる。このゼリーチユーインガムは包
装されて出荷製品となる。
このようにして得られたゼリーチユーインガム
は、ガムベース成分とゼリー成分とからなつてお
り、いわば従来のチユーインガムの糖類に代えて
ゼリー成分が用いられた構造となつているため、
咀嚼の初期にはゼリーの食感が得られ、咀嚼の継
続によりチユーインガムのチユーイング性に富む
噛み心地へと移行していく。また、このゼリーチ
ユーインガムは、チユーインガム成分糖類を含ん
でいないため、ゼリー成分が糖類による味にうち
消されるということがない。したがつて、ゼリー
成分による味覚とガムベース成分によるチユーイ
ング性の双方を二段階に分けて味わうことができ
るのである。
このゼリーチユーインガムは、水分の多いゼリ
ー成分の使用により軟化現象がおきやすくなると
いう欠点をガムベース成分のポリイソブチレン樹
脂量の増量や天然ゴムの配合等によつて防止して
いるため、軟化現象による噛み心地不良が生じな
い。
つぎに、この発明を実施例にもとづいて説明す
る。
実施例 1
まづ、つぎのようにしてゼリー液を調製した。
ゼラチン11重量部(以下「部」と略す)に水20
部を加えて30分以上膨潤させゼラチン液をつくつ
た(このゼラチン液は使用直前に70℃の湯浴につ
け溶融する)。他方、砂糖72部、水飴48部、水24
部を混合し、これを煮つめ120℃になつたところ
で加熱を中止し、上記のようにして得られたゼラ
チン液を加え、撹拌混合してゼリー液化した。つ
ぎに、このゼリー液を放冷し、温度が83℃以下に
下つた時点で香料を1部添加し撹拌混合した。つ
ぎに、ガムベースを下記のようにして製造した。
すなわち、高重合度の酢酸ビニル樹脂を12〜20
%、ポリイソブチレン樹脂を15〜25%、ロジンの
グリセリンエステルを10〜15%、乳化剤を5〜10
%、無機質を20%の割合で配合し、これを加熱撹
拌することにより製造した。
そして、得られたガムベースを75部とり、これ
を100℃に加熱溶融し、この加熱溶融ガムベース
に上記のゼリー液を添加して全体が均一になるま
で5〜10分間激しく撹拌した。つぎに、この混合
液を放冷して90〜95℃の温度でスターチモールド
に充填し、充填後、24時間室温で放置したのち、
スターチモールドからとりだしゼリーチユーイン
ガムを得た。
このようにして得られたゼリーチユーインガム
の水分は最終的に9〜11%になつた。
実施例 2〜4
ガムベースの使用量を第1表に示すように代え
た。それ以外は実施例1と同様にしてゼリーチユ
ーインガムを得た。

無を調べるとともに男女各50名のパネルにより食
感、軟化現象、香味の持続性の官能検査を実施し
た。その結果は第3表に示すとおりであつた。こ
の表から明らかなようにスターチモールドに対す
る充填時の温度を90〜95℃に設定することが好ま

実施例 5
まづ、下記のようにしてゼリー液を調整した。
すなわち、充分に乾燥した容器中でペクチン17部
と粉糖60部を完全に混合した。ついで、300部の
水を加熱しながら、この中に上記ペクチンと粉糖
の混合物を加えて激しく撹拌し、撹拌を続けなが
ら水を沸騰状態にした。ついで、1〜2分間沸騰
を続けさせ、その状態でグラニユー糖600部と60
℃に加熱されている水飴350部とを添加し、急速
に110℃まで加熱した。ついで加熱を停止し、香
料9部と色素0.7部を添加して激しく撹拌し、つ
いで50%のクエン酸溶液7.4部を加えてゼリー液
を調製した。つぎに、実施例1と同様にして得ら
れたガムベースを615部(33%)とり、これを加
熱溶融してこの加熱溶融ガムベース中に上記ゼリ
ー液を添加して均一になるまで撹拌混合し、この
混合液を、90℃でスターチモールドに充填し24時
間室温で放置したのち取り出しゼリーチユーイン
ガムを得た。このゼリーチユーインガムも実施例
1で得られたものと同様の特性をそなえていた。
以上のように、この発明のゼリーチユーインガ
ムは、ガムベース成分とゼリー成分とからなるた
め、噛みはじめはゼリーの噛み心地を呈し、ゼリ
ー成分の溶出にともない徐々にチユーインガムの
食感を呈するようになる。すなわち、この発明の
ゼリーチユーインガムは二種類の食感を呈するも
のである。しかも、構成成分がガムベース成分と
ゼリー成分とからなつていてゼリー成分の味をう
ち消すような他の成分が含まれていないためゼリ
ー成分の味、食感が充分に表現されるのである。
そしてこのようなゼリーチユーインガムを、ガム
ベースを加熱溶融してこの溶融ガムベース中にゼ
リー液を添加し、撹拌して溶融ガムベースとゼリ
ー液を混合し、これを賦形し冷却することにより
製造すると、ガムベース成分粒子とゼリー成分粒
子とが極めて良好な状態で、かつ、短時間で交じ
り合うため、ゼリーチユーインガムを効率よく製

チユーインガム。 2 ガムベース成分が、高重合度の酢酸ビニル樹
脂と、ポリイソブチレン樹脂とロジンのグリセリ
ンエステルを主体とする風船ガム用のガムベース
成分である特許請求の範囲第1項記載のゼリーチ
ユーインガム。 3 高重合度の酢酸ビニル樹脂が、重合度450〜
1000のものであり、ポリイソブチレン樹脂が、分
子量5000〜20000程度のものである特許請求の範
囲第2項記載のゼリーチユーインガム。 4 ポリイソブチレン樹脂の添加量がガムベース
の15〜25重量%に設定され、かつ天然ゴムがガム
ベース成分としてガムベースの3〜5重量%添加
される特許請求の範囲第2項記載のゼリーチユー
インガム。 5 ガムベース成分の配合量が、ゼリーチユーイ
ンガム全体の25〜40重量%になるように設定され
ている特許請求の範囲第1項ないし第4項のいず
れかに記載のゼリーチユーインガム。 6 砂糖、水飴およびゲル化剤を主要成分とする
ゼリー液を準備するとともにガムベースを準備
し、ガムベースを加熱溶融してこの溶融ガムベー
ス中にゼリー液を添加し、ゼリー液のゲル化を防
止しうる温度条件下において撹拌して溶融ガムベ
ースとゼリー液とを混合し、この混合物を賦形し
冷却することにより所定形状のゼリーチユーイン
ガムを得ることを特徴とするゼリーチユーインガ
