(産業上の利用分野)
この考案は、鍋を加熱することによつて食品を
焼くと同時に燻すことも可能な調理器用蓋に関す

(従来の技術)
鍋底から離間させて張設した金網に肉類、魚類
等の食品を載せこれを排気筒を備えたドーム型蓋
で冠覆して、ガスコンロ等にかけて加熱し、上記
食品を調理する過程で上記食品から鍋底に滴下す
る脂肪や水分を鍋底で焼き、これから発する煙や
蒸気を、上記蓋の内側で対流させ、上記食品の下
面並びに上面からこれを作用させて調理する調理
法が知られている。第2図において、符号1はバ
ーナーを示し、バーナ1から発生する炎を囲繞す
るようにグリラーサポート2が設けられ、このグ
リラーサポート2に平底鍋状のグリラー3が載置
されている。グリラー3は、外周部に上方開口の
凹状溝3aを形成し、凹状溝3aの内周側頂部に
炎の熱気が侵入できるように穴3bを多数等間隔
に穿設させられてなつている。グリラー3の内部
には金属のワイヤから構成されるネツト4が底板
3cから適宜離間されて張設されている。蓋5は
ドーム部5aと煙突部5bとが一体に形成されて
いる。ドーム部5aは下線がグリラー凹状溝3a
にゆるく係合するようになつていて、グリラー3
を冠覆して食品を収納するようになつている。従
つて、この調理法はバーナー1から発する熱は鍋
底を熱し、その輻射熱で上記金網上におかれた食
品を焼き、食品から滴下する肪脂、水分は鍋底で
焼かれ煙、水蒸気となる。この煙、水蒸気は、上
記食品の下面に作用することは勿論であるが、グ
リラー3の周縁の穴3bから侵入する熱がドーム
型蓋5の内面に沿つた対流と一緒になつて、食品
の上面にも作用し、焼く、蒸す、燻るの機能を果
たすことになる。煙突部5bはドーム部5aの頂
部から立設されており、ドーム部5a内の煙を必
要時に上方へ誘導排出する機能を有している。煙
突部5bには縦方向にコの字状の把手6が取付け
られ中央部6aは火傷をしないように木材又はプ
ラスチツクで形成されている。煙突部5bの開口
部には中央にフツク7が固着され、更にカバー8
が開口部を開閉できるようにフツク7を挿通する
切欠きを有していて開口部に枢着されている。ワ

い蓋5が回転しなくとも把手が1個所にしかない
ため調理者の無意識動作により手が煙突部5bに

部52との相対位置にある。すなわち把手54は
環状体に形成されており、煙突部52の外周面か

上する。更にまた、従来の1個所把手のように蓋
の重量分布の偏差を生じて、蓋が傾動するなどの
