「作用」

て受水槽内に貯溜した水の水面には上記微粒子の軽いも
のが浮上してスカムとなり、比重の大な灰粒子!5は水
中に沈降してスライムとなる。そして上記スカムは溢流
堰の溢流水に伴って水密排水装置によって下水M等に排
出される。上記下引ダクト及び散水ダクトの内部の気圧
は上記排水装置が水密であるため上昇することなく減圧
が保持される。父上記受水槽中の水や散水のため上記両

業務用調理室lの内部に木炭炉、電気コンロ、ガスフン
口等8を設け、同コンロ等8と壁9との間に囲壁9に沿
ってステンレススチール製下引排気ダクト2を立設する
。同ダクト2の上端は上記コンロ等8の若干上方に開口
IOする。開口部IOにはステンレススチール製ギラリ
ll及び[li蓋12を設けるものである。このように
したダクトzのTIにはステンレススチール製水平散水
タクト3を接続し、これを地面又は地下に配設し、その
先端に立上り部を設け、その上端に調理室lの外に向う
排風機4を接続するものである。上記散水ダクト3の下
部には散水管13を水平に配設し、間管13に散水ノズ
ル14を上向に突設し、ポンプ又は水道栓に接続して同
ノズル14から散水ダクト3内に散水15する。又同ダ
クト3の一端部に溢流堰6を設けて間服6と散水ダクト
3の起端面との間に散水受水槽5を形成するものである
。この溢流堰6の外側にけ水密排水装置7を設ける。こ
の排水装置7け第1図に示すように上向0字管16の一
端開口部を溢流堰6の外側に開口し、他端に下向0字管
17を接続して上下方向蛇行管を形成し上向0字管16
の底部を下向U字管17の排出下端にバイパス管I8で
接続し、同バイパスW18に開閉弁19を設けてなるも
のである。そのため溢流堰6の溢流水20け上向U字管
16内に貯水し下向0字管17の上端水準に水位が保た
れ、溢流水20け下向0字管17の上端を溢流して排出
され水密が保たれる。溢流水2oに伴って堰6を越え念
スカム21け上向0字管16の一端開口部の水面上に浮
上堆積される。その場合は排気機4を停止しバイパス管
18の開閉弁19を開くことによって水位が第1図仮想
線゛水準に下降しスカム21は下降水面上に浮く、その
後同開閉弁19を閉じると溢流水20によって上向0字
管16の水位が上昇し上昇に際し下降し六スカム21の
半分子th同同字字管6の他端に浮上して下向0字管1
7から排出する動作を複数回繰返すことにより上記溢流
スカム21を排出することができる。この排出作業は業
務調理中止時間又は休日等に行えば良いし、排気機4か
ら排出される虱の中のスカム5″Lを見てその時期を決
めることができる。又第2図で示すようにロータリーバ
ルブ22によって溢流水20とスカム21とを同時に排
出しても差支えない。尚図中23で示すものは調理物、
24はその排煙、25は沈降スライム及び貯水riP呂
