[Prior Art] Conventionally, as a package for mushrooms, a package is known in which mushrooms are placed in a synthetic resin tray, overlaid with a film, and closed in a substantially airtight state. This packaging protects the mushrooms from dirt and dryness by overwrapping them with a film to maintain their freshness.

[Problems to be Solved by the Invention] However, the above-mentioned conventional packaging has the problem that mushrooms tend to grow in a short period of time while being stored, emitting a strange odor, and tend to lose freshness and commercial value. There is.

[Means for Solving the Problems] The inventor of the present invention analyzed the cause of the above-mentioned abnormal odor by measuring the gas composition inside the package, and as a result, the following points were found.

First, when mushrooms were covered in a substantially hermetically sealed state with a normal packaging film, it was found that the package was filled with off-flavor components within a short period of time. It has been determined that these odor components are mainly alcohol and acetal, which are easily diffused gases, so when we punched holes in the film covering the mushrooms, we found that the odor components were not trapped inside the package.
It was found that the fresh aroma of mushrooms was maintained.

However, it has been found that when large holes are made in the film, the mushrooms turn brown or dry in a short period of time, losing their freshness and commercial value. In particular, this rapid browning can be prevented by substantially hermetic packaging with ordinary packaging film, and therefore it is thought that it occurs when the oxygen concentration in the package increases.

In view of the above, in order to prevent the occurrence of off-flavors, browning and drying of mushrooms in a short period of time, it is necessary to release off-flavor components from inside the package, suppress the oxygen concentration inside the package and evaporate moisture. As a result of intensive research on this issue, the present inventor found that covering mushrooms with a film having pores of a specific opening area suppresses the occurrence of off-flavors and browning as well as prevents dryness. The present invention was completed by discovering that it has a remarkable effect on prevention.

As the film 2, any commonly used packaging film can be used, but the film 2 has an oxygen permeability of 5000 to 30.
000cc/m224hr is preferable, and most preferably, the oxygen permeability is 10000 to 15000cc/m224hr.
It is of m224hr. If the oxygen permeability is too low,
Mushrooms become unable to breathe, die, die, and become susceptible to rot, making it necessary to make the holes 3 larger or tiering them in multiple stages. It becomes easier for foreign substances such as Also,
On the other hand, if the oxygen permeability is too high, it will be difficult to prevent browning of mushrooms.

g/a is preferably 224 hr or less, most preferably carbonate sludge permeability is 80,000 to 70,000 cc/m
224hr, water vapor permeability is 100g/m224hr
These are as follows. By increasing the carbon dioxide concentration in the package to a certain extent, it is possible to suppress the respiration of the mushrooms 1 contained therein and maintain their freshness. If the carbon dioxide gas permeability is too high, freshness cannot be maintained by this carbon dioxide gas, and conversely, if the carbon dioxide gas permeability is too low, the carbon dioxide concentration will be excessive, making mushrooms susceptible to carbon dioxide damage. Moreover, if the water vapor permeability is too high, the mushrooms 1 will become dry easily.

From the above, the film 2 is preferably a polyethylene or polyvinyl chloride film, most preferably a polyethylene film. Furthermore, it is preferable that the container be transparent so that the mushrooms 1 contained therein can be seen.

The film 2 needs to cover the mushrooms 1 in a substantially airtight manner. If there are large gaps or holes in the film 2 covering the mushrooms 1, the oxygen concentration within the package cannot be suppressed and browning cannot be prevented in a short period of time. Here, covering in a substantially airtight state means that there are no holes 3 to be described later, that there are no holes in the film 2 that communicate between the inside and outside of the package, and that the seams of the film 2 are sufficiently overlapped to prevent ventilation. It means that the air is blocked, and it does not have to be completely sealed.

It is preferable that the present package is filled with mushrooms 1 to the extent that the mushrooms 1 do not move freely within the package, and is held down with a film 2. If played with, the mushrooms 1 will not only spoil more quickly, but will also increase the amount of extra space inside the package, making them more likely to brown and dry out. Further, even if mushrooms are packed in excess, the mushrooms are likely to be damaged, so it is preferable that 40% to 70% of the internal volume of the package is occupied by the mushrooms contained therein.

As shown in Fig. 1, this package can be one in which mushrooms 1 are placed in a tray 4 and overwrapped with a film 2, or the tray 4 is not used and the film 2 is placed in a tray 4.
It may also be made into a bag and filled with mushrooms. However, from the viewpoint of handling of the package, it is preferable to use the tray 4 as shown in the figure. If the package is overlapped from the top of the tray 4, it is easy to adhere to the tray 4 and obtain a sealed state. The film 2 is preferably a stretch film because it is easy to press down the mushrooms 1.

In the package of the present invention, 50% of mushroom 1 is added to film 2.
One or more holes 3 are provided which have an opening area equivalent to a circular hole with a diameter of 0.1 ml to 5.0 square meters and a diameter of 0.1 ml to 5.0 square meters. That is, the shape of the hole 3 may be circular, rectangular, or any other shape, but when there is a single hole 3, the hole 3 has an opening area equivalent to that of the circular hole, and when there are multiple holes 3, It is necessary that the total area of each opening is equal to the opening area of the circular hole. If the opening area of the pores 3 is too small relative to the amount of mushrooms, a strange odor will easily occur in a short period of time, and conversely, if the opening area of the pores 3 is too large relative to the amount of mushrooms, browning or excessive odor will occur in a short period of time. dryness is more likely to occur.

The hole 3 is preferably as small as possible within the required opening area; specifically, the hole 3 has a diameter of 0 and a layer of Im to 1II1.
Hole 3 preferably has the same opening area as circular hole 1.
By making it smaller, it becomes easier to prevent foreign substances such as dust, insects, and water from entering from the outside.

The hole 3 is preferably provided in a position where it is unlikely to be closed by the tray 4 or the mushrooms 1, and it is preferably provided on the upper surface side of the package in order to facilitate the release of off-flavor components.

[Effects of the Invention] According to the present invention, it is possible to prevent mushrooms from developing unpleasant odors and browning in a short period of time, and to maintain their freshness for more than twice as long as conventional methods, resulting in high commercial value. It is possible to maintain it for a long time. In addition, there is little weight loss due to drying, there is no need to increase the size over time, and furthermore, it prevents water droplets from adhering to the film, clouding, etc., and allows the mushrooms to look fresh as they are.
