。しかしこの魚肉のすり身には繊維性状がない。このた
めこれを歯ごたえのあるものとするためすわり付を行な
っている。しかし、天ぷらならば魚肉のすり身が単に一
枚の平板状にして油で揚げられたものであり、また蒲鉾
ならばこの素材を蒸したり焼いたりしただけであり、そ
の製法は古来からほとんど変ることがない。

り押し出された多条糸様素材の表面のみを焼くバーナと
、表面を焼いた多条糸状素材を押圧し偏平板状とする押
圧手段と、この偏平板状素材を定寸に切断するカッター
とより成る。
