そ内に有底の内部容器を埋入し、この内部容器の
内面を外気に連通させてみそを熟成すること(特
許第29735号)や、醸造タンク内に上端のみ開口
する中空筒を支架して、この中空筒内面および醸
造タンク外面に設けた加熱冷却管を介して内部の
みを加熱・冷却するようにしたもの(特公昭48−
10238号)があるが、これら内部容器、中空筒は
いずれも醸造容器とは別体のものであつて、その
