うのう膜)とに二分されるのであるが果汁中には果皮の
油胞部にある精油が混入した状態となる。

る)であり、これが貯蔵中α−テルピネオールに変化シ
て松脂臭や21ヒ臭を発生するものと考えられる。その
ためdlJモネンの少ない果汁が希求されることになる
。従来は、全果搾汁機による搾汁条件として精油があま
り出ないよう圧力等を調整して搾汁を行っているが一般
にはこうして搾出した果汁を濃縮して精油を除去する処
理が加えられる。香料としては、果皮油からd−リモネ
ンをある程度除いたテルペンレスの香料、配合香料、合
成香料が用いられているがその為製品は柑橘本来の風味
の少ないまた違った風味の果汁となっている。
