品質の大根おろしを提供でき、更にまた、特にマスター
ドオイルの配合割合を適切に変えることにより種類、あ
るいは収穫時期等により味の変わりうる大根を原料とし
てもほぼ一定品質の大根おろしを提供できるという利点
もある。

マスタードオイル3gおよびキサンタンガム209を配
合し、充分に混ぜ合わせたのち上記試験例と同様にして
冷凍大根おろし食品(マスタードオイル250ppm含
有)を製造した。
