Conventionally, cod liver oil has been collected using a pre-preparation method, a compression method, and a solvent extraction method. The pre-preparation method is a method in which fats and oils are heated to elute and collect the fats and oils, and the compression method is a method in which the fats and oils are steamed and then compressed to collect the fats and oils. Furthermore, the solvent extraction method is a method in which fats and oils are leached from a raw material of fats and oils using a solvent, and then the fats and oils are distilled to collect the fats and oils. Both methods require a heating operation when collecting the fats and oils, and as a result, the fats and oils are likely to be colored by the pigments contained in the raw materials, and a large amount of flavor substances are mixed into the fats and oils. In addition, oxidation was likely to be promoted during the heating operation, and the quality of the oil and fat was likely to be affected. For this reason, in the past, the color, fragrance, etc. of the obtained fats and oils were subsequently decolorized and deodorized to produce products, which required further multi-step chemical processing. Furthermore, energy consumption is also an important issue at the industrial level, and various efforts have been made to reduce the amount of energy consumed in the process from extraction to refining of fats and oils.

In view of the current situation, the present invention has been developed as a result of research into a method for collecting cod liver oil without using heating operations that directly affect the quality of fats and oils. This method is characterized by liver oil collection at different temperatures.

To explain the contents of the present invention in detail below, proteolytic enzymes or fish internal organs containing proteolytic enzymes are added to raw materials including liver collected from fish at a temperature of 10 degrees Celsius or less, and the pH is adjusted to the optimum. This is an oil extraction method in which the protein in the mixture is broken down by the action of proteolytic enzymes, and the oils and fats contained therein are easily separated. To explain the process using Figure 1, the liver removed from the fish is placed in a mixing tank, a proteolytic enzyme is added, and the pH is adjusted to the optimum pH level for the enzyme.

The mixture is transferred to a stirring reaction tank, and the stirring conditions vary depending on the quality and quantity of the raw materials, but the mixture is stirred at a rotation speed of 200 revolutions per minute or less for 48 hours from summer time. Meanwhile, reduce the temperature of the mixture to 10
and adjust the pH to maintain the initial setting value. Through these operations, the proteins are decomposed, the mixture becomes a slurry, and the fats and oils contained therein are separated. It is transferred to an oil and fat separation tank, and only the oil and fat are collected by flotation, squeezing, and centrifugation.

Next, the quality of the cod liver oil obtained according to the present invention is determined by measuring the acid value, color, and odor. Furthermore, for comparison, cod liver oil obtained by the boiling method and solvent extraction method was evaluated in the same manner, and the results are shown in Table 1.

Table 1 Quality Example of Cod Liver Oil 1 Remove the liver from a fresh walleye pollack, and mix it with 50 parts of a solution containing proteolytic enzymes extracted from the stomach of a fresh walleye pollack, per 100 parts of the liver in a container. Furthermore, the pH was adjusted to 1.8 using hydrochloric acid. Furthermore, crushed ice is added to the mixed liquid to prevent the product temperature from rising. 60 per minute with occasional addition of hydrochloric acid to maintain the initial pH.
