Abstract

PURPOSE:To prevent release of fish skin during heating and to make appearance of roast fish good, by boring previously very small plural holes passing thorough the fish skin on the surface of raw fish and roasting the fish. CONSTITUTION:Plural very small holes passing through fish skin is previously bored on the surface of raw fish, and the fish is roasted. Consequently, since the very small holes are previously set on part which is likely to release the fish skin, a gas expanded during heating is liberated through the small holes to the outside, unnatural internal force will not exert on the fish skin, so the fish skin is not released. The diameters of the small holes are preferable so long as the small holes release the gas inside the fish skin effectively, but unfavorable if they are noticeable when the fish is roasted. Therefor, the diameter in a raw state is preferably <=0.5mm. A pretreating tool to be used is a tool wherein plural needle-like protrusions with a small diameter are set on the surface of a base plate with a given area. The needle-like protrusions have preferably 0.1-0.5mm outer diameter to be inserted into the fish skin.

(Conventional technology) In places where a large number of grilled fish are required at once, such as wedding halls, in order to make the grilled fish look beautiful, raw fish bodies pierced with two wooden skewers are placed on a conveyor without using a net. The method used is to send the material to an infrared oven and bake it. In this case, the two wooden skewers are inserted into the underside of the fish to avoid leaving any scratches on the surface.

(Problems to be Solved by the Invention) However, conventional grilled fish had a problem in that the skin often partially peeled off when grilled. For example, when grilling sea bream, it is known that the skin of sea bream caught in nearby waters is relatively difficult to peel off, but the skin of imported frozen sea bream from distant seas is known to easily peel off. However, grilled sea bream, which is served at wedding receptions in particular, is considered a lucky charm, and those with peeling skin are considered bad luck and are disliked, so they must be disposed of as defective. It was uneconomical.

(Means for solving the problem) The present invention prevents the peeling of the skin of the grilled fish! As a result of repeated research and experiments, it was discovered that the main cause of skin peeling was the ejection of gas from inside the fish body during heating. This prevents peeling of the epidermis.

That is, the pre-treatment method for grilled fish according to the present invention is characterized in that a plurality of fine holes penetrating the epidermis are previously formed on the surface of the raw fish body. In this way, if small holes are prepared in advance in areas where the skin of the fish body is likely to peel off, the gas expanded during heating will be released to the outside through these holes, thereby preventing stress on the skin. No internal pressure is applied and no peeling occurs.

The diameter of the small pores should be one that allows the gas inside the skin to be released effectively, but it is not desirable to have a diameter that is so large that it will be noticeable when baked. It is preferable that the thickness be 0.5 m or less, and 0.1 to 0.5 layers thick is more preferable. The depth of the small hole should be at least enough to penetrate the epidermis, but it should cut into the fish flesh slightly. degree is preferable.

If the number of pores per unit area is too small, the sufficient effect will not be obtained, and if it is too large, the epidermis will become rough, so 3c
The number of small holes is preferably about 1 to 10 per m square (9 crn'), and more preferably 1 to 5 per 2 cm square (4 crn').Such small holes are not necessarily provided on the entire surface of the fish body. There is no need to keep it in place, and it is sufficient to provide it only in areas where peeling is likely to occur.

Next, referring to the pretreatment tool according to the present invention, this pretreatment tool is made up of a plurality of small diameter needle-like protrusions arranged side by side on the surface of a base having a predetermined area. By pressing the ingredient against the fish body, the small holes for degassing can be efficiently formed.

The needle-like protrusion has an outer diameter of 0.1 at the part inserted into the fish's epidermis.
The length of the needle-like protrusion is preferably ~0.5■, and the tip thereof is preferably kept sharp to some extent.
It is fine as long as it can penetrate at least the epidermis, but it is practical to make it slightly longer than this.Normally, the amount of protrusion from the base should be about 2 to 10 m.The needle-like protrusion should be made of stainless steel. It is necessary to use a material such as steel wire or tungsten wire that has a strength that does not pose a problem in practical use, and preferably has corrosion resistance and abrasion resistance.

The base can be made of a material with suitable strength, such as a steel plate. In this case, it is preferable that the surface on which the needle-like protrusions are planted be formed as a concave curved surface corresponding to the roundness of the fish body.If the base surface is a flat surface, it is preferable to form the desired surface over a wide range on the convex curved surface of the fish body. The length of the needle-like protrusion should be made long to some extent so that the hole can be drilled at a deep depth (for example, 10~2
(m) is preferred; if the base is made of an elastic material such as sponge, it will deform to follow the curved surface of the fish body, which is advantageous in drilling small holes of uniform depth.

The density of needle-like protrusions is preferably about 1 to 10 needles per 3 cm square (9 crn'), and about 1 to 5 needles per 2 cm + w square (4 cm") so that small holes are bored at a preferable density. It is more preferable to do so.

In the pretreatment tool 1 (D) shown in FIG. 4, the base 3 has needle-like projections 4, 4. A flexible skin part (made of synthetic resin, etc.) 14, an elastic material part (made of sponge, etc.) 15, and a fixed part (made of iron plate, synthetic resin, etc.) 18, in which... are implanted. When the front portion provided with the needle-like protrusions is pressed against the fish body, the first elastic material portion I5 is deformed to improve its adhesion to the fish body. in this way,
In order to hold the needle-like protrusions 4, it is advantageous if the plate 3 is made of a deformable elastic material such as sponge rubber, since small holes of uniform depth can be drilled over a wide range.

Next, using the pretreatment tool 1 (A) shown in FIG. 1 above, small holes were actually punched in the skin of the sea bream, and the results of grilling are shown in Table 1. As can be seen from the table, The sea bream subjected to the pretreatment according to the present invention had a clearly lower incidence of skin peeling than the sea bream that was not subjected to the pretreatment.
