る。これらの処理工程のうち、粗榛工程、中操工程及び
精榛工程のいわゆる荒茶製造工程は緑茶の製造工程のう
ちの最も主要な工程であって、この工程での処理条件の
適否が製品緑茶の品質を左右するのである。上記した荒
茶製造工程は、材料葵葉を榛捻すると共に含有される水
分を除去するものであり、云わば荒茶製造装置は湊捻・
乾燥機である。ところで従釆のこの工程での茶藁中の含
有水分を徐去する方法は、熱風乾燥法であり、茶葉に対
して熱風を当ててこれを乾燥させるのであるが、特にこ
の工程では茶葉の温度を35〜4000の範囲に保ち、
茶葉がそれ以上の温度になることのない様にされていた
。例えば、粗榛工程では機内に80〜12び○の熱風を
送入して茶葵中の含有水分のうちの50〜60%を除去
するのであるが、この作業中熱風の風量は茶葉の温度が
35〜40qoの範囲内に保たれる様にコントロールさ
れるのである。この点は中榛工程においても同様であっ
て機内に60〜70q○の熱風を送入すると共に茶菓の
温度を35〜40℃に保って処理するのである。これに
対して、精操機は開放型であって、茶葉に対して熱風を
当てることはないが、榛捻面附近の雰囲気温度を50〜
60q0程度に保って、裸捻を行なうので、茶葉は上記
二工程と同様、風乾されるのである。本発明者は良質の
荒茶を製造する方法について検討した結果、荒茶を製造
するには材料茶葉を加熱してこれを35〜40qo程度
の温度に保ちつつ、茶葉を榛捻すると共に茶業中の含有
水分を蒸散させることが肝要であり、特に茶葉を加熱す
るには、単に茶葉に対して熱風を当てるのではなく、熱
風に換え、又は熱風を当てながら、茶葉を熱板に接触さ
せてこれを加熱することが必要であって、この様にする
ことによって製品緑茶には青臭味が無くなり、緑茶に特
有の香気と爽快味が強くなって極めて品質が向上するこ
とが分った。

料茶葉を投入するための投入口と裸捻処理を終えた茶葉
を取出すための取出口とが設けられるものであって、図
では一例として茶秦投入口4を胴の一方の側面に形成し
てこれにシュート5を取付けると共に腕の一部を開閉自
在に形成してこれを取出口6とした。更に胴の一方の側
面に熱風供給ダクト7を接続して腕内に熱風を送入する
様にすると共に他方の側面には排気ファン8を取付けて
茶葉から発生した水分を吸引して且同外へ排出する様に
した。ところで、操捻面2は竹又は樫等の適宜な材料を
用いて形成することを常とするがこれに対して熱盤3は
茶葉を接触加熱するものであって、表面温度を10ぴ0
以上、好ましくは150〜20000程度にするもので
あるところから、少なくとも表層部分はステンレス鋼、
アルミニウム等の金属又は耐熱性硬質合成樹脂を用いて
形成する。熱盤3を加溢するには、蒸気を用いる方法や
外側からバーナで加熱する方法等があるが、熱盤の中に
シーズヒータ9を埋め込んで電気的に加熱する方法によ
れば、機構が簡単であるうえ温度制禦をすることができ
る利点がある。また、操捻胴1には操手10が設けられ
るものであって、先ず、操捻胴1の中心線上の附近に回
転軸11が独設されてこれに裸手10が取付けられる。
回転軸11は角形断面をなしており、操手1川ま回転軸
11の各面に対して例えば二本又は三本程度が絹をなし
て取付けられるのである。この回転軸11は図示しない
駆動モータと連絡していて、操捻月岡1の回転方向と同
一方向に向って、榛捻燈同1よりも速い速度で回転する
のである。操手10の茶葉を操捻面に押圧する力は適宜
調節することができる様にするのは当然であって、一例
として回転軸11を操捻胴1に対して昇降自在とするか
、或いは綾手11の取付樟12を伸縮自在とするのであ
る。尚、図ではファン8の回転軸は操手10の回転軸を
兼用した。本発明は上記した構成をなしたもので、この
装置を用いて茶葉を榛捻処理するには次の様にして行な
う。
