Abstract

PURPOSE:To pack a food which loses the taste and flavor under the condition of an inadequate water-content, with a simple apparatus, in a state suitable for preservation, without causing the loss of the taste and flavor, by sealing the food in a container together with an inert gas containing a proper amount of water. CONSTITUTION:The opening 3 at the bottom 2 of the water tank 1 is provided with the valve 4, and the opening is connected with an inlet pipe 5 for an inert gas A such as N2 gas, CO2 gas, etc. The opening 7 at the top 6 of the tank 1 is connected with the pipe 8 for introducing the water-containing gas B into the sealed package, and the water-feed pipe 9 is connected to the upper part of the tank 1 through the valve 10. The water level is controlled automatically by a level sensor. A filter to divide the gas bubbles is attached just above the bottom opening 3. The inert gas bubbles float upward through the water layer, and the resultant inert gas B having the desired water-content is introduced through the top pipe 8 of the tank into the package.

Foods contain a moderate amount of water, and many foods lose their flavor if they lose this water. This is particularly noticeable in flaky foods such as dried bonito flakes.

Even if the above-mentioned pieces of dried bonito flakes are sealed, the water evaporates, and...
The amount of stickiness will decrease. In particular, nitrogen gas purging packaging method is common for sealed packaging of dried bonito flakes to maintain freshness, but the moisture content of nitrogen gas is approximately 0%, which promotes the evaporation of water from the dried bonito flakes, which reduces the flavor. is significantly lower than in the original fresh case.

Conventionally, when sealing, inert gas is substituted and filled to remove oxygen, and nitrogen gas or carbon dioxide gas is usually used, which prevents oxidation from rain. (The larger the food, the larger it is) and the flavor and taste of the contents will change. Furthermore, the weight of the contents itself changes due to water evaporation.

The method of the present invention is to pass the above-mentioned inert gas into a water tank and seal it as gas for sealed packaging.
An example is shown in the explanatory diagram of Fig. 1, where 1 is a water tank, and an opening 3 at the bottom 2 is provided with a valve 4. An introduction pipe 5 is connected.

A conduit 8 for water-containing gas B to be filled into the sealed package is connected to the opening 7 of the top 6 of the tank 1. A conduit 9 for water supply is connected to the upper part of the tank through a valve 0. The water level is automatically controlled by a liquid level sensor. In addition, a filter is provided directly above the bottom opening 3 to subdivide air bubbles, and the inert gas A rises through the water layer C to the conduit 8 in the main part of the tank.
Inert gas B, l! of a given water content through! : It is introduced into the package.

Another method is to install a large number of water-containing filters 13 made of a breathable material such as non-woven fabric in a closed container 12 from the gas A inlet 14 to the water-containing gas B outlet 15, as shown in the explanatory diagram of FIG. In the meantime, the water-containing filters 1 to 13 arranged in a layered manner are connected to water supply pipes P and supplied with water. Water accumulated at the bottom of the tank 12 is drained from a drain pipe 7 equipped with a valve 16 by automatically operating the valve 16 using a liquid level sensor J8.
