However, although these benefits can be fully expected in short-time operations, when frying operations last for a long time, the oil layer that comes into contact with the water surface becomes hotter than the boiling point of water, and the water that comes in contact with it also becomes hotter. The oil gradually heats up due to heat conduction from the oil layer, eventually reaching a temperature above its boiling point and vaporizing.

In addition, since the ventilation pipe 21 is provided directly above the communication part 16 that communicates the oil layer B and the water layer A, the oil flowing toward the water layer A will always be cooled by the ventilation pipe 21 and will not reach the water surface. It not only effectively prevents the temperature of the oil layer B in contact with the oil layer B from rising, but also prevents the oil from flowing into the lower layer and prevents convection.

In this way, air is constantly flowing in the ventilation section 17.18 from the front plate 10a side of the frying pan 10 to the exhaust stack 12 on the rear plate 10b side due to the upward airflow in the exhaust stack 12 caused by the high temperature fluid. Of course, the flow is shaped like e, and since the partition wall 12a is provided inside the exhaust pipe 12 so that the high-temperature fluid flowing out from the heating pipe 14 is guided above the exhaust pipe 12, the high-temperature fluid is Since backflow to the lower part of the exhaust pipe 12, that is, to the exhaust port side of the ventilation section 17.18, is prevented, the heat is released more efficiently.

Further, during frying, sediments such as charcoal and food debris that are generated slide down the upper surfaces 17a and 18a of the ventilation parts 17.18 and fall from the communication part 16 to the bottom of the water layer A.
It can be removed to the outside from the discharge pipe 13 if necessary.

As explained above, according to the frying device of the present invention, the ventilation section is formed so that the center is the communication section between the upper and lower layers and the upper surfaces are inclined toward the communication section, and the ventilation section is formed directly above the communication section. A ventilation pipe is provided with one end passing through the exhaust pipe so as to be located below the oil layer, and a large number of heat sinks are provided protruding inside this ventilation part, and furthermore, the air flows out from the heating pipe into the inside of the exhaust pipe. Since the partition wall was provided so that the high-temperature fluid was guided upwards into the exhaust pipe, the heat at the bottom of the oil layer was efficiently dissipated through the ventilation section and the heat sink, and the high-temperature fluid flowing out from the heating pipe was directed downwards. Since there is no backflow, the released heat is effectively released from the exhaust stack to the outside.

Therefore, it is possible to reliably prevent the temperature rise in the lower part of the oil layer, and therefore also prevent the temperature rise in the water layer, so that the oil frying operation can be carried out safely.

In addition, precipitates such as charcoal and food particles generated during frying slide down along the slope of the upper surface of the ventilation section and fall intensively from the communication section to the bottom of the water layer, making it easy to remove them.
