し、上記の如き従来の方法では、冷凍調理米を別途加熱
調理用容器等に移し替える手間がいる、という欠点があ
った。

ブン又は電子レンジで加熱処理することを特徴とする調
理米飯の処理方法、に存する。

量としては米に対し0.5〜2.0重社%が好適である

ない場合は、調理米飯とした後冷凍し、その後解凍調理
した際に、上記したグリセリン脂肪酸エステルの作用を
調理米飯全体に且つ充分に発揮することができなくなる
傾向が現われてくる。このことはグリセリン脂肪酸エス
テルの添加量が少なすぎる場合も同様である。反対に、
グリセリン脂肪酸エステルの悸加鼠が多くなってくると
、該グリセリン脂肪酸エステルの味及びにおいが感じら
れるようになり、製品に悪影響を与えるようになってく
る。次に、グリセリン脂肪酸エステルの添加方法は、粉
末状で添加、ペースト状で添加、液状で添加、のいずれ
の方法でもよいが、グリセリン脂肪酸エステルと米とを
充分に接、触させるということを満足させるためには、
液状として添加するのが、最も好ましく 5 ) い。
