Abstract
PURPOSE: To maintain the keeping effect of a food for a longer time, by using a proteolytic enzyme, glucose, glucose oxidase, etc.
CONSTITUTION: A food is preserved by adding 0.005W5wt%, preferably 0.05W 1wt%, based on the weight of the food, glucose, 0.001W1wt%, preferably 0.005W 0.5wt%, proteolytic enzyme, e.g. papain or bromelain, having a potency of 10,000 units or more, preferably 100,000 units or more, based on one g proteolytic enzyme, and 0.0001W0.5wt%, preferably 0.001W0.05wt%, glucose oxidase and peroxidase and/or catalase, having a potency ≥100 units, preferably ≥1,000 units, based on one g glucose oxidase, and peroxidase and/or catalase to the food.
