Abstract

PURPOSE: Berries of grape from which stems are removed are dipped in a hot aqueous caustic soda and washed with water to efficiently remove skins of grape.
CONSTITUTION: Stems are removed from grape berries and the berries are thoroughly washed with water, then dipped in an 0.8W2.0% aqueous caustic soda heated up to 90W100°C for 40W120sec. Then, they are cooled with water, washed with water and stirred slightly. Skins peeled off float on the water surface and pulps sink down to the bottom. The process is especially effective on Delaware and Cambell to cause little damage on the pulps.
