Abstract

PURPOSE:Palatinose is used as the major ingredient of starting materials to make decay-resistant fondant molasses. CONSTITUTION:Palatinose is combined with one or more selected from reductive maltose molasses, sorbitol, isomaltitol, glucopyranoside-1,6-mannitol, maltose and coupling sugar by 5-25% to prepare an aqueous solution of, e.g., 60-80% solid concentration. After concentrated with heat, the aqueous solution is cooled under stirring to form fine crystals of palatinose, thus giving the objective fondant molasses.
