Abstract

PURPOSE: To prepare a solid juice having improved heat stability, shelf stability, uniformity, and masticating properties like that of natural fruit, etc., by fruit juice or vegetable juice obtained by passing fruits or vegetables through a strainer to calcium-alginic acid gel reaction.
CONSTITUTION: Fruit juice or vegetable juice obtained by passing fruits or vegetables through a strainer is blended with 0.5W3.0wt% alginic acid, and, if necessary, citrus pectin, organic acid, etc., homogenized, fed to an arbitary container, allowed to stand at low temperature, and solidified, to give a solidified substance. This substance is sliced to any size, and heated in 0.5W5wt% solution of calcium lactate, calcium acette, calcium chloride, etc.
