Abstract

PURPOSE: A solid brewed food having good taste and high nutritive value, by using "miso", a brewed product consisting essentially of soybeans as a basic ingredient, processing it in such a way that it is applied to a westernized meal.
CONSTITUTION: Soybeans are brewed together with grain, e.g., rice, wheat, etc. by ordinary "miso" brewing and they are aged for several days. The brewed matter is seasoned with a chemical seasoning, spice, and others and adjusted to a salt content ≤5wt%, preferably 2W3wt%. The matter is then blended with a solidifying agent, e.g., starch, the white, etc. and kneaded to give a food ingredient, which is formed into a desired shape, heated, and solidified to give a solid brewed food. This food may be directly subjected to vacuum packaging or retort sterilization or the food ingredient formed into the desired shape is covered with a pastry, fried in a high-temperature oil so that it is solidified by heating.
