Abstract

PURPOSE: To improve the stability of paprika coloring matter to oxygen and light, by blending carrot extract with paprika coloring matter in the presence of a browning reaction product of a saccharide or one between a saccharide and an amino acid.
CONSTITUTION: A coloring matter compositin contains paprika coloring matter, carrot extract and a browning reaction product of a saccharide and/or one between a saccharide and an amino acid. Examples of said saccharides useful for said browning reaction products are preferably, monosaccharides, disaccharides, trisaccharides, dextrin and starch. Examples of said amino acids are preferably glycine, alanine, isoleucine, valine, lysine, glutamic acid, aspartic acid, glutamine, asparagine, proline, arginine, tryptophan, histidine, cystine and salts thereof.
